are there any good recipes for thanksgiving with carrots as the main ingredient?

If you like sweet, try this.

Molasses and Ginger–Glazed Carrots

* 4 pounds carrots
* 4 tablespoons unsalted butter (1/2 stick)
* 2 tablespoons dark brown sugar
* 2 tablespoons light molasses
* 2 teaspoons grated ginger



1. Peel carrots and slice them on the bias (at about a 45-degree angle) into 1/2-inch-thick pieces (you should have about 10 cups). Fill a large pot with salted water and bring to a boil. Cook carrots until just tender, about 10 minutes. Drain. (If making ahead, drain the carrots and cool in ice water to halt cooking. Drain and refrigerate until ready to finish the recipe.)
2. Return carrots to the pot over medium-low heat, and add butter, sugar, molasses, and ginger. Cook until carrots are warmed through and glazed, about 5 minutes. Season well with salt and freshly ground black pepper. Serve.

Carrot pie : boil some carrots untill they are soft, mash them, use them just like pumpkin

Glazed carrots: parcook the carrots, (boiling for about 3-5 minutes is good) Melt some brown sugar, corn syrup (or molasses if you prefer) and butter in a saute pan, add some ginger, and cinnamon (pumpkin pie spice works good for this). Then add the carrots and saute over low-medium heat untill they are as tender as you like. be careful not to burn the sugar, but caramelizing is ok.

Pumpkin Pie Carrots: Cook your carrots until just tender, add vegetable oil and butter just enough to coat the carrots, brown sugar, pumpkin pie spice and salt and pepper. Cook the carrots a little longer until the butter and sugar form a sauce/glaze. Not the prettiest dish but tasty and kids enjoy them.

Gingered carrots that are baked with butter, lemon juice and ginger.

INGREDIENTS:
6 carrots, pared and cut into 1/2-inch slices
2 teaspoons fresh lemon juice
3/4 teaspoon salt
1/2 teaspoon ground ginger
1/8 teaspoon pepper
2 tablespoons butter

PREPARATION:
Place carrots in a buttered 1-quart casserole. Mix lemon juice with salt, ginger, and pepper; pour over carrots then dot with butter. Cover and bake at 400° for 1 hour, or until carrots are tender.
Serves 4.

Boil carrots until tender, drain add buter or marg. Boil carrots and peeled parsnips together until tender drain add buter or marg. You could add peas and pearl onions together with the carrots.
