I made mashed potatoes with a ricer, and they came out very lumpy/grainy. My mom has always used a ricer, and never has any problems. This has happened to me before, so this time I heated the milk and butter before I added them, but no luck. Do you know the cause, and any way to fix it?

If the potatoes are undercooked, you will always get lumpy mashed potatoes. On the other hand, if they are overcooked, you will get a soggy, mushy consistency. Keep checking while you boil. Just when you get to the point where a fork penetrates easily, they're done. Drain and rice. And a ricer is the best way to get a smooth consistency.

Like you, I love using a ricer, it makes terrific potatoes. I think the ricer will do a better job if the potatoes are cold. If that doesn't work, I'd use a masher to get rid of the lumps. Good luck and enjoy your leftovers.

Make sure the potatoes are cooked .

Also try can milk and cream cheese--in place of regular milk and butter.

I'm guessing that you overboiled your potatoes, which can make them mealy. Try cooking them a little less (just until a knife slides in easily). Also, you could bake them instead of boiling.

Run them through more that once, they come out nice and smooth

are you using the disk with the smallest holes?
