Dark corn Syrup 1 cup
1 cup honey
11/4 cup packed brown sugar dissolved in 1/4 hot water or liquid used in recipe
1 cup maple syrup

Light Syrup 1 cup
11/4 cup granulate sugar dissolved in 1/4 of hot water of liquid in recipe
1 cup maple syrup

Corn syrup doesn't have much flavor, really. It is just a sweet taste. If you substitute honey, or molasses, you will have those flavors. Corn syrup is just a liquid sweetener; so you could use whatever sort of syrup that you have, like pancake syrup (it's usually a little more liquid than corn syrup). Or you could make your own:

○ Option 1: • 2 cups granulated sugar • 3/4 cup Water • 1/4 tsp. Cream of Tartar • dash of salt
Combine all ingredients in a heavy, large pan (stainless). Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage, 238 -240 degrees F.
Cool syrup and store in a covered container at room temperature. It will keep for about 2 months. Makes almost 2 cups.
○ Option 2: For each 1 cup corn syrup called for, use • 1 1/4 cups granulated sugar or firmly packed brown sugar plus • 1/4 cup liquid (use liquid called for in recipe).
○ Option 3: • 1 cup sugar • 1/4 cup liquid • 1 cup honey

TIP: To substitute brown sugar use • 1 cup sugar plus • 1 tsp. molasses

You can make your own sugar syrup, and cook it to the consistency of corn syrup. Start with 1 C water and 1 C sugar. Melt the sugar in the water in a pan. When the sugar is completely melted, continue cooking at a low heat--barely a simmer--until the syrup thickens to a consistency you want.

Maple syrup can also often be substituted for corn syrup and can add a nice flavor to many recipes. It depends on what you need it for.
