That is a hard one and a very hard fix. Unlike alot of ingredients onion can not be offset with sugar, vinegar, or a base. What you could do it to increase the volume of other ingredients.

You did not say what you are making, but if it is a sauce add more water or vegetable stock. Something with a starch, add more potatoes or noodles. A meat type of gravy or sauce, add a bit of red wine, water, a dash of red wine vinegar, and a pinch of sugar.

Speaking of potatoes, they do have the property of soaking up flavours and salt. You may want to throw one in and see what the result is.

I love the taste of onion, I would personally add a bit more garlic, olive oil, provincial herbs and call the dish Italian.

Add a liberal amount of diced garlic and no one will notice the onion taste. Big name restaurants do it all the time. I can`t prove this but I am pretty sure that is how they do it because my girlfriend`s aunt from her father`s side of the family used to work for a guy that had food brought in from some big name restaurant and I heard her talking about how she thought they reduced the onion taste in their soup before it was delivered to them.
