They actually do a lot: They do 3:2 pulldown, de-interlace and up-convert to 720 or 1080.
But it's still like magnifying newsprint: The original information started with 480 lines of data and it tries to magnify and fill in to fake like there is more information.
If you have an HDTV - your television will up convert standard def video to some higher resolution. Do standard def channels look as good as the HD channels? No.
These up-converting DVD players will do a somewhat better job than your television, but it still magnifying and trying to 'fake' a HD video image.
Get a real HD DVD player. For $200 the Toshiba A3 will play true HD-DVD videos, and it up-converts standard def as well. So you get the best of both worlds.
If you do decide to go with a up-converting player, the "Oppo" brand has been well respected for it's ability to up-convert things.

Stay away from cheap upconverting dvd players. I have a denon and used to design high end home theaters. I do like the first persons technical advise, but if you get an upconverting dvd make sure you get a proper HDMI cable. Otherwise you are not converting. Plus your dvd will only show the native resolution of your tv 1080i, or 720p, unless you have a 1080p. I would be really leary of an HD Dvd player that costs under $150. Even with the holiday prices. There is a reason why there are cheap ones and expensive ones.

The upconversion in an HD DVD player will take a normal standard definition DVD and try to simulate the picture to one which is more closer to HD.
