Butter if you have it or Applesauce in a pinch.

All of these are great substitutes for oil. You can't taste it in the cake either, plus it cuts out a lot of unnecessary fats. In this case I would go with the applesauce!!

applesauce
pureed prunes
apple butter
fruit-based fat substitutes
ricotta cheese
bananas (mashed)
butter

Olive oil may be healthier for you but it has a flavor that is better suited to savory, not sweet, recipes. Also, I don't think it can stand up to the temperature required to bake the cake properly. It has a lower boiling point than other oils and may actually fall apart, again adversely affecting the flavor of the cake. This is also why you seldom see recipes for fried food that use olive oil. Better stick with a neutral tasting oil with a higher smoke or boiling point.
