will the vegetables get soggy in the cream of mush soup overnight?

If you are using fresh or canned veggies it will be just fine. If you are useing frozen (that's what I do for the bolder colors & fresher flavors) then you'd want to keep the veggies out untill just before hand, so that as they thaw out, they don't add a bunch of water & make everything else soggy.

I made my green bean casserole today and I will bake it tomorrow - I do it this way every year and it always comes out fine; I think it tastes even better when put together the day before and then baked the day of serving.

Should be just fine. You could always bake it now and just leave off a few minutes...like 15 and then reheat in the oven tomorrow!
