Fudge
1 jar marshmallow cream
2 sticks margarine
1 small can Milnot - 5 oz.
3 cups sugar
1 pack semi sweet chocolate chips
1 teaspoon vanilla
Melt butter in microwave. Mix in Milnot and sugar. Cook in microwave 3 min and stir. Cook 2 1/2 min and stir. Cook 3 min and stir. Cook 2 1/2 min and stir. Mix in chocolate chips. Stir until melted. Add vanilla and marshmallow cream. Stir til mixed. Put in buttered pan or buttered wax paper. Makes about 3 pounds of fudge. Some of the best fudge you will ever have and so simple and quick. Oh you can add nuts too if you like. Approx 1 cup or to your taste.
P.S. I have made the Pumpkin Crunch above but call it Pumpkin Pie Cake. It is also very easy to make and very delicious.

Pumpkin Crunch
1 box yellow cake mix
1 can 15 oz. pumpkin
1 can 12 oz. evaporated milk
3 large eggs
1 1/2 cups sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup pecans, chopped
2 sticks butter, melted
Cool Whip
Preheat oven to 350 degrees F. Grease bottom of 13 x 9 inch pan. Combine pumpkin, milk, eggs, sugar, cinnamon and salt in a large bowl. Pour into pan, sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans. Drizzle melted butter over pecans. Bake at 350 degrees F. for 50 - 55 minutes until golden brown. Serve with cool whip.
Very simple and yummy!!

a no bake pie like a banana cream or choclate silk is pretty simple. Just follow the direction on the Jello pudding box and use a pre-made crust.
Also one of my favorite desserts thats probably not traditional for thanksgiving but is really good is hot brownie with ice cream. Use store bought brownies(but make sure they aren't bricks) or bake them yourself from a mix. Place one brownie square in a microwave safe bowl and pour on some chocolate syrup. Nuke in microwave 30-60 sec(depending on your microwave) until hot but no overly hot. Top with one scoop of ice cream(vanilla works well) and more chocolate. The combo of warm and cold, chocolate and gooeyness always pleases a crowd. I usually serve this to my dinner guests. You can play around with it and use different kinds of ice cream, brownies and toppings. I got the idea after having something similar at a restaurant.

This was my great aunt's recipe. It's simple, I learned it when I was 10, and it's still my favorite.
Pistachio pie
1 pkg pistachio pudding mix
1 can (about 15 oz.) crushed pineapple
1 12 oz. tub of Cool Whip
1 Keebler graham crust
Mix the pudding mix and pineapple and wait 15 minutes. Fold in the Cool Whip, dump it in the crust, and refrigerate for 4 hours or more.
It's light, fluffy, pretty, and tastes great!

I go to Costco, and buy their pumpkin pie, apple pie, etc.
Seriously, if you don't regularly make desserts, Thanksgiving is NOT the time to try it out, if you're thinking it has to be from scratch. The cakes and desserts in a box are pretty easy though. You can take refrigerated pie dough, and add the apple/cherry/etc., pie filling of your choice, and bake.

One of the favourites at my house is a brownie pie.
One box of brownie mix (8X8), we prefer the one with walnuts but just as good without nuts.
Bake in a pie pan.
Let it cool.
Make 1 package of chocolate pudding(small box)
Pour on top of brownie and put in fridge to get cool...about an hour.
Top with Whip Cream.
I also grate a bar of chocolate and add to the top for garnish.

You want super simple, go with a classic pumpkin pie, (with some sides of whipped topping), or a delicous pecan pie, or my personal favorite, Chess pie (its a southern thing)....You could also find some simple bars or cookie recipes...like lemon bars, butter bars, choc chip oatmeal cookies....the possibilites are endless...
cake wise, I am personally doing an Upside Down Pineapple Cake! YUMMY!

I made Pumpkin Double Layer Pie(can be found at kraftfoods.com) It was so easy. I also made pumpkin bread and banana bread....in a box by pillsbury.
