The recipe calls for 1/2 cup butter. I only have 1/4c.

I have no apple sauce and no oil. Can i add an extra egg or egg white or something? It has 2 eggs originally.

I'd use the 1/4 c. butter and add an egg white along with the 2 eggs the recipe calls for.

Heavy cream or whole milk might be better. The purpose of butter is too help hold in the moisture due to the fat. Extra eggs won't really do that. The protein in the eggs help to combine all the ingredients like a glue.

The only thing I think you can do is use mayonnaise and don't add the other extra egg. Mayonnaise has the added oil and egg. So just add the mayo (NO MIRACLE WHIP) at the 1/4 cup and it should be fine.

Shortening like Crisco or veg oil will work. Some recipes call for oil. Your brownies will be fudgier. Don't over-bake though. Decrease baking time by 5 mins. Insert toothpick, when it comes out clean, they are done.(though they may not look so)
