Jesus, like any educated Jew of his day would have known what you call the Old Testament (the Tanak, really) back to back, up and down. He would have been especially versed in the first five books of Moses (the Law) and seen its cultural significance in his day.
Just to mention, I personally worked on a scholarly biblical work called B'Chol Echad where my job was tracking down the possible sources of Jesus' Sermon on the Mount. All of what he said could be found in contemporary or predated Jewish sources of his time. Pretty amazing. Not only did he know his scriptures, he knew his tradition.

With this in mind, it is a reasonable conclusion that he "taught from" (referred to) all of the books of the Old Testament at one time or another.
2) As mentioned, it was likely a whole lot.
3) No. Though admittedly I have not memorized the entire bible, I *have* read several versions entirely and I use bible software to locate verses in discussions such as this.

John 21:25: Jesus did many other things as well. If every one of them were written down, I suppose that even the whole world would not have room for the books that would be written.
