Kings Arms Tavern Sweet Potatoes

3-pounds sweet potatoes
¾-cup light brown sugar, packed divided
3-tablespoons butter
5 teaspoons cinnamon
½-teaspoon nutmeg
¼-teaspoon salt
1-cup milk

Preheat oven to 400º
Grease 1½ quart casserole
Cook sweet potatoes in boiling salted water until done; drain peel and mash them.

Stir in all the remaining ingredients except 2 tablespoons of sugar.

Turn the mixture in to prepared casserole and sprinkle with remaining sugar.

Bake at 400º for 30 minutes.

PUMPKIN can be substituted for the sweet potatoes and it comes out well.

Lime Jell-O Mold

1 large box Lime Jell-O
8 ounces Cream Cheese - room temperature
1 can Crushed Pineapple - chilled
1 16 ounce container of Cool Whip or fresh whipped cream

Drain pineapple saving liquid to use in Jell-O. Make Jell-O using the quick-set instructions replacing some of the cold water with the pineapple juice. Make sure gelatin is well dissolved. Place in fridge until semi-set. In a blender combine cream cheese and pineapple until well blended. Mix into semi-set Jell-O than fold in Cool Whip. Pour into a gelatin mold and refrigerate until set or over night. To serve, unmold onto a plate large enough for the mold.

Ingredients
1/2 cup miniature semisweet chocolate pieces
5 tablespoons margarine or butter
3/4 cup quick-cooking or regular rolled oats
3/4 cup all-purpose flour
1/4 cup packed brown sugar
1 20-ounce cherry pie filling
1 16-ounce can pitted tart red cherries (water-pack), drained
1/4 teaspoon almond extract
1/2 cup all-purpose flour
2 tablespoons packed brown sugar
2 tablespoons quick-cooking or regular rolled oats
3 tablespoons margarine or butter, softened
1/4 cup miniature semisweet chocolate pieces

Directions
1. Grease a 10-inch pie plate; set aside. For crust, in a medium saucepan melt the chocolate pieces and margarine or butter. Remove from heat; stir in oats, flour, and brown sugar. Press onto bottom and sides of prepared pie plate to form a firm, even crust. Bake in a 350 degree F. oven for 10 minutes.

2. Meanwhile, for filling, in a medium mixing bowl combine pie filling, cherries, and almond extract. Pour into the baked crust.

3. For topping, in a small mixing bowl stir together the flour, brown sugar, and oats. Cut in the margarine or butter until mixture resembles coarse crumbs. Stir in the chocolate pieces. Sprinkle over filling. Bake in a 350 degree F. oven for 35 minutes. Cool on a wire rack. Makes 10 servings.

Pecan pie is pretty easy. Just stir everything together, dump it in a crust and bake.

Here's what I made for dessert, and it's the simplest dessert I know.

Pistachio pie

1 pkg pistachio pudding mix
1 can (about 15 oz.) crushed pineapple
1 12 oz. tub of Cool Whip
1 Keebler graham crust

Mix the pudding mix and pineapple together, let rest for 15 minutes. Fold in the Cool Whip, dump it all into the crust, and refrigerate for 4+ hours. It's cool, light and fluffy.

Turkey breast casserole. Stove top stuffing, as directed..in casserole dish/ cake pan. Skinless/boneless turkey breast placed evenly on top. Cream of chicken soup over all. Crushed chips or paparika or curry powder for a tad of coclor/texture on top. Oven at 350 degrees for 45 mins. cover for first 15 (speeds up cooking)Canned sweet potatoes in baking dish, add marshmallows + butter/marg or brown sugar(or both) add to oven for last half hour of casserole time. Instant potatoes and gravy..if you like and a deli pie. Or go to your local grocery. They now sell complete Holiday dinners.

Not yo' Mama's Banana Pudding by Paula Deen...let me type it out...hang on.

1 8 oz cream cheese
1 can condensed milk
1 lg box (4 or 6 oz--cant remember)Jello Vanilla Pudding
1 12 oz Cool Whip
4 or 5 bananas sliced
1 pkg Pepperidge Farms Chess Cookies

fix vanilla pudding according to pkg, except omit 1 cup milk, let set. blend cream cheese and condensed milk together, stir in fixed pudding, then fold in cool whip. layer your cookies in the bottom of 13X9X2, but banana slices on top of cookies, put pudding mixture on top of that...garnish w/ banana slices and leftover cookies (i crumble those and sprinkle on top)

chicken parm- chicken patties w/ tomato sause and parmesan cheese. Delicious... go to olive gardens site and they will tell the recipe!!!!!!!!!!!
