I am alone today too. I'm making a 3 lb turkey roast, stove top stuffing, a single baked potato (in with the turkey), brussel sprouts, and canned cranberry sauce. Oh yeah, I got a peach pie too. I'll eat a couple of pieces over the weekend and then take the rest to work on Monday. I made vegetarian stuffed squash last night just for fun. That would make a cool thanksgiving feast for two as well.

It started out I got the turkey roast so I could have meat for a casserole, but due to a new baby in the family born yesterday, we cancelled thanksgiving. So, my roast is now my 'feast'. I'll eat a bit today and then use the rest in the casserole tomorrow and for sandwiches. Turkey never goes to waste.

Make a nice apple salad, using a few yellow delicious apples, red seedless grapes halved, diced celery, and walnut pieces, add Miracle Whip and toss.

Also something easy if you like it, is Cranberry jelly, like Ocean Spray, or the in the deli you can purchase cranberry salad, whichever you prefer. Cranberries make Thanksgiving meals complete!

You definitely need stuffing on the side. Just because it's a ham doesn't mean you can't have stuffing. Toss in a green salad, and maybe a simple dessert.

why don't you invite people over.. maybe a coworker you talk to.. or from school if your still in school..

If its just you too splurge yourself.. make a little bit of everything your craving just in small quantity..=)

I come from a spanish family and we eat differently.. so we don't have your traditional mac. or greens..

so maybe you want to bake a cake or something
