cheesy spam puff
Ingredients:
6 slices White bread; torn in small pieces
1 1/4 cup Milk
3 Eggs
1 tablespoon Spicy mustard
1/2 teaspoon Garlic powder
1/2 teaspoon Paprika
1 can (12 oz size) Spam luncheon meat, cubed
2 cups Shredded Cheddar cheese; divided
1/2 cup Chopped onion
1/2 cup Shredded Monterey Jack cheese
Directions:
Heat oven to 375 degrees F.
In a large mixing bowl, combine bread, milk, eggs, mustard, garlic powder and paprika. With electric mixer, beat at medium speed 1 minute or until smooth. Stir in Spam, 1 cup cheddar cheese, and onion. Pour into a greased 12- by 8-inch baking dish. Bake 25 minutes. Top with remaining cheddar and Monterey Jack cheese. Bake 5 minutes longer or until cheese is melted. Let stand 10 minutes before serving.

Before I started eating healthy and eliminated hings like spam from my diet, I would have it chopped up into small cubes, and fried until it went crunchy on the outside, then I would use it as the meat base in a stir-fried rice.

I slice mine and fry it in a pan until it's heated through. Spread either a hamburger bun or squishy white bread liberally with mayo, top with cooked spam, a slice of American cheese and an iceberg lettuce leaf, the remaining bun/bread and bon appetit!

Spam is awesome, but you have to get the real thing, not Treet or store brand. What I do is slice it thin, put it on a slice of white bread, add a slice of colby cheese and put it under the broiler til it is bubbly. Add a little salt and it is so yummy.

I love spam! Used to eat it in ramen in Hawaii (very big over there!). I eat it fried up by itself, or served at breakfast with scrambled eggs and cheese; blended in with mashed potatos; chopped and sauteed with fresh spinach and garlic....very versatile stuff that spam!

My ex used to fry it up with a little sugar to create a crunchy, sweet-glazed meat product. Hey, man! Whatever floats your boat! =)
