Eastern Oklahoma Hickory Nut Pie

1 c. Hickory nuts in small pieces
3 med. eggs, beaten
1 c. light/dark corn syrup---eather will work
1/2 c. sugar + 1 table spoon flour { mixed well }
1/8 tsp. salt
1 tsp. vanilla
1/4 c. butter, melted
1 (9 inch) unbaked pie shell --NOT DEEP DISH

Beat eggs. Add syrup, sugar, salt, vanilla and melted butter. Mix well. Place pecans in the bottom of pie shell. Add filling and bake at 350 F. for 50-60 minutes. Pecans will rise to the top and form a custard layer.Take from oven when center becomes firm but not too firm it will firm up more after removed from oven.
bobwire --- you must be as country as I am Most people don't
even know what a hickory nut is. The Indian people in this area make a porage from pounded hickory nuts called
conutchee, I have never learned to like it. But I do love hickory nut pie. Hope you like this recipe. jim b

Oh my goodness. Those things are awesome. I used to receive one every Christmas from a friend, sadly my friend passed away earlier this year. I understand they are very time consuming to make because the hickory meats are so small to get out of the hulls. Anyway, I don't have a recipe, but I'm thinking you could probably use a pecan pie recipe substituting hickory nuts for pecans. Good luck.

Hickory Nut Pie

½ c butter or margarine, melted
1 c sugar
4 eggs, beaten
1 t vanilla
1 c light corn syrup

1 to 1½ c nuts, broken
1 unbaked 9-inch pie shell

Combine butter, sugar and syrup and cook over low heat, stirring constantly until sugar is well dissolved. Let cool slightly. Add eggs, vanilla and salt to mixture and beat well. Pour filling into unbaked pie shell, which has broken nuts in the bottom. Bake at 325 degrees for 50 – 55 minutes. Serve warm or cold. (Rich) Serves 8.

Another one:

Mix the eggs, sugar, syrup, vanilla, and margarine, adding the nuts last. Pour into pie shell and bake in a 400ºF. oven 10 minutes then reduce the heat to 350ºF. and bake for 40 additional minutes.
