You cannot possibly know the full origins of them. Or what has been lost in translation. Or what has been lost of left out. Those decisions were made by previous generations. So how do you know that the version you hold in your hand isn't some terrible Chinese whispers of a tome, full of stuff that would make God absolutely despair.

Interesting, isn't it.

Like the mistranslation of the Hebrew "ha-almah" as meaning "virgin" instead of "young girl"...
Almost ... dare i say it ... miraculous.

How do you know the Devil didn't say he was God and have desert nomads write that stuff down. C'mon...A single male creation deity? Where in nature do single males spontaneously produce life for no reason at all?
A virgin birth to a child fathered by a god? (Which, BTW, is in several Greek myths)

Edit: There are several translations so the Buy-bull is shown to be misintepreted and have different meanings.

Simple answer: Because of the strength of evidence against the claim it has been altered, because the so called "lost books" were never lost (we knew where they were all along), because those previous generation left records of what they did and why they did it and because it has proven to be trustworthy and historically reliable despite the many attempts through the years to prove otherwise.

There is within the heart of man, a Holy Torah, a Holy Bible, a Holy Qur'an.
If man wishes to know the true meaning of these texts, or ancient scriptures, then he must take a journey within, and the true meaning of them will be revealed in "Truth".

"God is within man - man is within God."
God is within man, this is what all the Prophets of God have revealed to mankind.
Man must go within and the "Truth" will be explained.

If this inner journey is not taken by man, the "Truth" shall remain forever cloaked by veils of illusion!

"Peace be always with you."

Because the Jews have been entrusted with keep the Torah undefiled. They have done a far better job than the greeks, the romans, and the english in preserving Gods Word.
If you do not study Torah on a regular bases from a Messianic perspective I guarantee the Brit Hadashah ( New Testament) will be taken out of context and there will be hundreds of denominations (demon-nations). Study Torah and you'll see. Shalom.

What made you decide that God wasn't made up by men, too...and that what is thought to be God now, on any side, is another series of terrible Chinese whispers?

The truth is as alive then as it is today. When the truth is revealed within and the same spirit that influenced the historical writers testifies to itself now, that's reason enough to believe.

I didn't. That's the joy of Orthodox, Catholic faith. The Church, which I and billions of other Orthodox and Catholic Christians believe is The Body of Christ, filled with the Holy Ghost at the first Pentecost and is still present when the Body meets in Ecumenical Council, by that same mind of Christ, decided which books of Holy Writ were canonical and which were not.

God draws you to Him. You can trust the King James Version of the Holy Bible it is not bound by copyright. God would not let His word be bound by man. Remember this when you buy a Bible.
