My family insist I make the 7 layer salad every year.....
Take a 9x13 pan ( a glass one is great can this can be pretty)
Tear apart a head of lettuce or two and put down in the pan.
Dice up celery, red onion, green pepper, Roma tomatoes, and do a layer of each (you can change this to whatever veggies you guys like. You top layer is a bag of FROZEN peas.
Take 2 cups of mayonnaise and mix with some sugar, I use a little bit less than 1/2 cup (add more is you want it sweeter or less--depends on what you prefer)
"Frost" the top, right over the peas
Put shredded cheddar cheese on top of that and sprinkle Bacon Bits on it. Cover tightly and refrigerate at least 12 hours, I usually do overnight.

We have this every year at Thanksgiving
Cauliflower Salad
1 large head fresh cauliflower
2 heads lettuce
3 cups cooked bacon Crumbled
mix all together
Dressing
3 cups Miracle Whip
1 cup sugar
1/2 cup milk
mix well and pour over salad

Mixed field greens, feta cheese, kalamata olives, cherry tomatoes, garlic croutons, with Greek salad dressing (Panera Bread has the best Greek salad dressing). Also if you ever have more time, polenta croutons are really good on this salad.

Baby spinach, dried cranberries, garganzola cheese
dressing
1 pack of fresh basil
3 mashed garlic gloves
1/2 tablespoon of pepper
1 tablespoon of salt
1 cup of apple cider vinegar
2 cups of vegatable oil
1 cup of sugar
blend in the blender for 15 min at high set aside and refrigerate for an hour. my family loved it and they are not to big in change.

Mixed greens with feta cheese, sliced almonds, dried figs and balsamic or raspberry vinaigrette. You could use just about any cheese like goat or shaved Parmesan cheese if you don't like feta.

Buy a bagged lettuce mix, add tomatoes, matchstick carrots, shredded cheese and have a couple of different dressings available.
Simple and good.
