I would use cheese, broccoli and peppers.

I've tried to make it but it always turns out scrambled!!

Here is how I do it.
You need a non-stick pan.
Choose and prepare your veggies. I use green onions,
green and red peppers, and some carrot
3 eggs beaten together

In the pan saute 1/2 the veggies until they are carmalized.
Add the beaten eggs and mix together, then let cook very slowly. till they are done all the way through.
Add the rest of the fresh veggies on 1/2 of the egg.
Fold the other half over the first half.
At this point I ussually add some cheese and salsa to the yop, cover and let cook for a few minutes until the cheeze is melted.

By cooking very slow, the egg stays soft so you can fold it without breaking it. Adding the fresh veggies over only one half makes it easier to fold the other half over it. It's important that the line where it will fold does not have any fresh veggies that might make it tear.

The "Rachael" Omelet Recipe courtesy Tommy's on Coventry

1/4 cup small broccoli florets
2 tablespoons clarified butter (or 1 tablespoon olive oil and 1 tablespoon butter)
1/4 cup diced Roma tomatoes
1/4 cup diced yellow onions
1/4 cup diced green pepper
1/4 cup diced mushrooms
Kosher salt and freshly ground black pepper
3 eggs, well-beaten
1 ounce Muenster, shredded
1 ounce Cheddar, shredded
Whole wheat toast and fresh fruit, as accompaniments


Steam the broccoli, either in a microwave or steamer, until tender and reserve.
Melt the butter in an omelet pan or small skillet over medium-high heat. Add the tomatoes, onions, peppers, and mushrooms and cook, stirring frequently until the onions soften and the tomato juices evaporate, about 5 minutes. Add the broccoli to the pan and season the vegetable mixture with salt and pepper. Pour the eggs over the vegetables. Cook until the eggs begin to set 2 to 3 minutes. Sprinkle the cheeses over the omelet. Cook until the eggs are no longer runny then fold the omelet in half. Raise the heat if the omelet is not brown. Cook for another 1 to 2 minutes, if necessary, then transfer to a plate and serve with whole-wheat toast and fresh fruit.

Cook your veggies so they are cooked through. Beat your eggs, pour into a small skillet with a small amount of oil. Let this start to cook so it has a cooked base. Add your veggies to one side of omelet, fold over so it looks like a wedge. add your cheese on top. put in a couple tablespoons of water and cover. Let this steam for only a short time(enough to melt the cheese) . slide out of the pan.

i usually flip mine rite over, and not folded in half.
when you pour your mixture into your hot pan, let it cook until you can easily slide your spatula under the egg, without tearing it. if you can get the spatula under and it is firm enuf to lift it, then do a quick lift and flip
i cook mine in an electric frying pan, (square shaped) and i use the spatula to 'cut' into 4's....then i flip four quares, its a little easier.
u may just be trying to flip them too soon. my hubby 'scrambled' our omlettes the other day, but he was also using a frying pan on the stove and its a no-stick, that has lost the effect, and it sticks.
