Try shredded cabbage with shredded carrots. Use lemon and olive oil vinaigrette. The secret, slice a garlic clove in half and use it to (butter) your salad bowl then discard.

Use a green other than iceberg, something darker green if available, or at least a mix of darker green and iceberg and baby spinach.
toss with matchstick carrots, red cabbage, halved cherry tomatoes, black olives, cheese, pepperoncini, for extras if desired you could put in some drained/rinsed red kidney beans, chopped bacon. Use a zesty Italian or make your own viniagrette.

Make an anti-pasto with iceberg and salami and provolone cheese, tuna, crumbly blue and italian dressing, you also need to put tomatoes, black olives, and pepperchinis on there, bascially it's a big pile of salad on a plate and you layer the rest of the ingredients on top.

I just hada real simple salad this weeked that had white beans, arugula, chopped read onions, and garlic. Add some olive oil and lemon juice (salt and pepper to taste). I would refridgerate it for 20 minutes to let the flavors combine.

I hate to be boring, but nothing can beat iceberg lettuce chopped in chunks, sliced cucumbers, cherry tomatoes, carrots sliced in medallions, celery bits, green bell pepper bits- and grated cheddar/bacon bits and croutons on the side.

The dressing should be up to the person- I think vegetables' natural flavor is often best.
