This is a great question.God created mankind, I believe the mandkind was many people not just Adam and Eve eventhough OT tells about Adam and Eve.

If you read the bible closely god always makes agreements with particular individuals at particular times. Adam and Eve, Moses, David, and so on all have stories which unfold and promises (or agreements) that are made afterward. What happens after affects the entire future of god's chosen. This is apparently god's way of making amends, or compromise with those he has chosen to represent mankind at certain times. His agreement with the Hebrews has never been done away with either and is still, apparently, in effect. The Old Testament should also be called as it is properly named, the TaNaK. Or the Torah, Neviim and Kethuvim (the Laws, the Prophets and the Writings).

Take a moment, too, and read each major interaction between god and the primary players in the Tanak. Each of them are made some sort of promise or come to some agreement between them and god. The whole book is filled with such negotiations. Consider how this adds to the flavor of the message the authors are trying to present.

The agreement was with Abraham and his seed, the Isrealites, not Adam and Eve. Those two were doomed.
