3 generations of Italian/Portuguese chefs have swore on this recipe since WAY before I was born

2 Lg cans of tomato sauce
1 Med can tomato paste
1 lb sweet Italian Sausage
1/2 lb hamburger (85/15 or better)
1 tsp ground cloves (or less to taste, but its the no
longer secret ingredient
1/2 med yellow onion (the flatter the onion, the
sweeter the taste)
garlic, sage, oregano to taste (I like to cover the
sauce in the pan with a thin layer of each to start, you can always add more.
1/4c to 3/4c sugar
mush the Ital saus and the hamb together and fry up as chunks or meatballs ( chunks are better), add to sauce, bring to boil, add 1/4 c of sugar, simmer 15 mins, stir, taste, add sugar and spices till yummy, cover and low simmer for about an hour, stirring every 15 minutes, if still too acidic, you can add more sugar, bring back to boil, cover and remove from heat, let stand for at least 30 mins, this would be a good time to make your pasta, boil water, add 1/2c of oil, add noodles at boil, cook 10 mins, drain rinse and enjoy.

depends on the type of pasta you use if you are using reg. long pasta i think some sweetness in sauce is good

how to get it?
as wierd as this may seem
you add sugar.
not alot, just enough.
keep tasting from time to time.

So add a cup of sugar to your sauce.LOL PLEASE DON'T. If
you add sugar it helps the acidity problem. Which many people suffer with. I add it to most of my tomato recipe's. Nice
question.
