This is a Paula Dean recipe. She has great mac and cheese - google her for more: To make this recipe more basic, substitute 2 cups cheddar for all the different types of cheese and add a can of cheddar cheese soup with all the rest of the ingredients - and cut the eggs to 3
2 cups dried elbow macaroni (4 cups cooked)
1/3 cup grated Cheddar
1/3 cup grated Swiss
1/3 cup grated Jack
1/3 cup grated colby
1/3 cup grated Muenster
1/3 cup grated Gouda
1/2 cup sour cream
4 tablespoons butter, cut into pieces
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk
Nonstick spray
Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese if desired.

INGREDIENTS

* 8 ounces cubed processed cheese food
* 2 eggs, beaten
* 1/4 teaspoon salt
* 1/8 teaspoon ground black pepper
DIRECTIONS
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain well and return to cooking pot.
2. In a small saucepan over medium heat, melt 8 tablespoons butter; stir into the macaroni.
3. In a large bowl, combine the Muenster cheese, mild and sharp Cheddar cheeses, and Monterey Jack cheese; mix well.
4. Preheat oven to 350 degrees F (175 degrees C).
5. Add the half and half, 1 1/2 cups of cheese mixture, cubed processed cheese food, and eggs to macaroni; mix together and season with salt and pepper. Transfer to a lightly greased deep 2 1/2 quart casserole dish. Sprinkle with the remaining 1/2 cup of cheese mixture and 1 tablespoon of butter.
6. Bake in preheated oven for 35 minutes or until hot and bubbling around the edges; serve..=)

Mine is simplest of all. Get boxed Kraft macaroni and cheese for the number of people you're feeding. Prepare as directed. Add onion powder to taste. If you want you can chop up onions and put in while pasta is cooking. If you want to bake it, add a little extra milk and put in greased casserole dish. and bake until sorta brown. Also if you're going to bake it, undercook pasta a little. It cooks more in the oven.
This is good with cooked ground beef stirred in. Just brown gb like you're going to make spaghetti then stir in for cheeseburger macaroni.
You've got to admit it's simple and it's better than any I've tried to make from scratch.

1 (8 ounce) package macaroni
4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup cream
1/2 teaspoon salt
fresh ground black pepper, to taste
2 cups good quality shredded cheddar cheese
1/2 cup buttered breadcrumbs
Preheat oven to 400°F.
Cook and drain macaroni according to package directions; set aside.
In a large saucepan melt butter.
Add flour mixed with salt and pepper, using a whisk to stir until well blended.
Pour milk and cream in gradually; stirring constantly.
Bring to boiling point and boil 2 minutes (stirring constantly).
Reduce heat and cook (stirring constantly) 10 minutes.
Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.
Turn off flame.
Add macaroni to the saucepan and toss to coat with the cheese sauce.
Transfer macaroni to a buttered baking dish.
Sprinkle with breadcrumbs.
Bake 20 minutes until the top is golden brown.
(You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

A slmple, but tasty recipe: Boil your macaroni (preferably whole wheat or multi-grain), strain it. With your burner on low, add a little milk, butter, salt, and sliced or grated cheddar cheese (old is best). Stir it into the macaroni. Pesto-chango, simple yet delicious! (Though my kids STILL prefer Kraft Dinner!)
