Once you put the stuffing in the big hole in the turkey, you also put some dressing in the hole where the neck was.

Some people rub butter all over the outside of the turkey and then sprinkle with salt.

Turn your oven on to 325º and cook it 20-25 minutes for every pound of turkey you have before you stuffed it. If you don't stuff it, it's more like 15-20 minutes per pound. But all my cookbooks say 25 minutes per pound and I found with the larger turkeys, it's done a little before that timeframe.

Put your turkey on a rack - breast side down - for the first half of the cooking time. Then turn it over and continue cooking. Tent the turkey with foil - loosely - too keep it from browning too fast. Pour water into the bottom of your pan to 1/2"-1" of water. This will keep the fats from burning on the bottom of the pan and create nice juices for your gravy. As you get near the last 45 minutes, if the bird isn't nice and brown, remove the foil and continue to cook until it's nice and brown.

Some people say to gently put the stuffing in the bird, I pack it in. But my dressing doesn't call for eggs - which could be the reason for people getting sick when it's packed in. The best dressing I've found is to substitute hamburger or hot dog buns for the little dried cubes of bread. The flavor will be much better. I saute onions and celery in butter and add poultry seasoning, sage, and black pepper. I pour them over the bread, add water and swish to get all the seasoning still in the pan. I add chopped pecans to my dressing and mix well. I add enough water to make quite moist - at least enough to hold it together. Fill the cavity in both the front and back of the bird.

If you have extra stuffing that won't fit in the bird, put it in heavy duty foil and put the raw turkey neck on top of the dressing, seal the package and bake for 1 hour in with the turkey. If you cook it the entire time you cook the turkey, the dressing in the foil will burn on the bottom.
