Chicken Pesto:

8 servings
1 package pesto sauce mix
8 boneless skinless chicken breasts
breadcrumbs
4 slices provolone cheese, cut in half
1 (4 ounce) can sliced mushrooms
Prepare pesto sauce according to package direction.
Heat oven to 350 degrees.
Spray rectangular dish (9 by 12 inch) with no-stick spray.
Moisten chicken with water, shake off excess, and coat complete with bread crumbs.
Place chicken in baking dish.
Spread pesto sauce evenly over chicken breasts.
Cover each breast with ½ slice of provolone cheese.
Spread mushrooms over cheese.
Bake in oven for 45- 50 minutes.
Serve with pasta.

Basil Pesto Bread Rounds
1 (1 pound) loaf French baguette
2/3 cup mayonnaise
1/3 cup basil pesto
2 cloves garlic, minced
1/2 cup freshly grated Parmesan cheese
salt to taste
DIRECTIONS
Preheat oven on broiler setting. Arrange bread slices in a single layer on a cookie sheet. Place under broiler for 5 to 8 minutes, or until lightly toasted on one side. Watch carefully to ensure they don't burn. Remove from oven, and flip bread slices so that the toasted side is on the bottom.
Set the oven temperature for 350 degrees F (175 degrees C). In a small bowl, mix together mayonnaise, pesto, garlic, Parmesan and salt. Spread evenly over untoasted sides of bread slices.
Bake in the preheated oven for 6 to 8 minutes. Set the oven to broil, and place the rounds under the broiler just until they begin to bubble and turn golden. Let cool slightly before serving.
***By the way you can make your own pesto at home, and it tastes way better because it's fresh!!
3 large garlic cloves
1/2 cup pine nuts
1 teaspoon salt
1/2 teaspoon black pepper
3 cups loosely packed fresh basil
2/3 cup extra-virgin olive oil
With food processor running, drop in garlic and finely chop. Stop motor and add nuts, salt, pepper, and basil, then process until finely chopped. With motor running, add oil, blending until incorporated.
Pesto keeps, its surface covered with plastic wrap, chilled, 1 week.

Of course you can toss it w/ hot pasta.
Make pesto mayo to put on grilled chicken sandwiches... mix some pesto and mayo togeher, that's it!
Add some to a simple vinaigrette to freshen up a salad
spoon over fresh tomatoes and mozzarella chz

4 ozs. cream cheese, room temperature
1/2 cup sour cream
2 tbls. grated Parmesan cheese
Assorted fresh vegetables, crackers or bread sticks
1. Place pesto, cream cheese, sour cream and Parmesan cheese in food processor or blender; cover. Process until mixture is creamy.
2. Serve with your choice of fresh veggies, crackers or bread sticks.

Use it to top a store bought pizza round (such as Boboli), place sliced tomatoes and fresh mozzarella on top of pesto, top it off with thinly sliced red onion and bake according to pizza instructions. You can also use fresh or frozen pizza dough instead of a pre-baked one. Spread it on a thick slice of a good rustic Italian bread and top with left over turkey for a different twist on the turkey sandwich! Or use it as a dipping sauce for raw veggies.

simple but delishes dish. cook off some capallini pasta, as that's cooking off the pasta , in a saute pan add some olive oil , pine nuts let them toast to a golden brown , add golden raisins and 1/2 cup of vegetable broth (buy in soup aisle). add your pesto, toss your pasta. served family style in a big bowl , with pecorino romano. enjoy.

Hell Yea!
I love pesto.
Pesto tortellini is really easy, and very tasty. Just get some tortellini from the grocery store (Bertulli is best), throw in some roast chicken pieces (or Turkey, for a little Thanksgiving-ness) and serve with steamed brocolli.
