The 40GB PS3 has no backwards compatibility with PS2 games, and uses a more efficient 65nm cell processor. Also, there are no memory slots, and only has 2 USB ports.
The 60 GB has full backwards compatibility and uses the 95nm cell processor, which takes more power than the 65nm chip. Also, it has memory slots and 4 USB ports.
The 80GB has some backwards compatibility, can play most ps2 games, and uses the 95nm chip. Also, it has memory slots and 4 USB ports.

Depends how much video steaming and if you want to be able to play your old PS2 games.
The 80 GB was released first and is backwards compatible (can play PS2 games). Unfortunately it sold nowhere near the number of units they were expecting so Sony decided to make a cheaper version, by removing the ports required to play PS2 games.
so
For PS2 compatibility and if you intend to store a large photo and video library on it (streams video to a psp cool huh) then go for the 80GB
If you own a PS2 that works and intend to only play games on the unit, save some cash and buy the cheaper 40GB.

It depends, if you have many PlayStation 2 games and have a PS2 that works, I would recommend you to get the 40GB. For the extra 100 bucks, you get backward compatibility and bigger hard drive on the 80GB. If you have a broken PS2, with many PS2 games, I would get the 80GB so you can get the backward compatibility. Both of them comes in a bundle, so for the 40GB you get a Blu-Ray Movie and the 80GB you get Motorstorm. That's basically the difference.

1). 20GB has no chrome trim, no memory card reader and no wi-fi. Not manufactured anymore. Has the best backwards compatibility with PS2 games due to Emotion Engine (PS2's CPU) and Graphics Synthesizer (PS2's GPU) installed.
2). NTSC 60GB has the same backwards compatibility as 20GB versio, also has memory card reader and wi-fi. Has a chrome trim.
3). 80GB - extended memory, but reduced backwards compatibility with PS2 games, it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played. Available only in NTSC regions.
4). 40GB - can't play PS2 games at all (all PS2 chips were removed), has 2 USBs instead of 4, no memory card reader, has wi-fi. Avalable in black and white colors. White is on sale only in Japan.
5). PAL 60GB - reduced backwards compatibility with PS2 games. it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played.

The 80gb is alot better than the 40gb because you get double the hardrive, card readers, and backward compatibility with ps2 games.

In the UK, the smaller version does not play sacd's (super audio cd's), nor does it have surround sounds ports, nor a memory stick port.
Also, it is not backwards compatible with ps2 games.
