I don't want to make the typical salad so these are things I want to use. I also would like to leave out leafy veggies.

baby corn (can)
kidney beans
chick peas
dried cranberries
tomatoes
cucumbers
bacon bits
croutons

Please suggest any other items and dressing too. Feel free to tell me to leave out any of the items I listed.

I would marinate them overnight in a raspberry vinaigrette, I would think about adding some cheddar or mozzarella cheese.

Creamy Cucumber Salad
2-3 cucumbers peeled and sliced
1 red onion, halved and sliced into half-rings
1 1/2-2 cups Hidden Valley Ranch or Cucumber Ranch dressing

Toss all ingredients in a bowl and chill before serving.


Dice the tomatoes, peel and slice the cucumbers, add the cranberries and some feta cheese and baby romaine lettuce, toss with raspberry vinaigrette.

That's enough different things for 2 or 3 salads.
I'd use niblet corn, with the beans, peas, & Italian dressing.

I'd like some kind of greens;-} how about shredded cabbage?
With dried cranberries, bacon bits, & cole slaw dressing.

Tomatoes, & cucumbers, sliced with balsamic vinegar & feta.
Set them out like a salad bar, with croutons on the side.

You can make Succotash.

- 1 can corn
- 1 can lima beans
- 1 red bell pepper
- 1 zucchini
- salt and pepper
- 1 T. butter


Heat the butter in a saucepan over medium heat. Dice the bell pepper and zucchini and add to pan. Cook 2-3 minutes until slightly tender. Add corn and lima beans, and saute for 5 minutes. Season with salt and pepper to desired taste.

If you leave out the dried cranberries, you could add an Italian type of dressing with vinegar and oil. It would be great marinated, and would last a long time if covered in the refrigerator.

I would use the baby corn. chick peas, dried cranberries, tomatoes, cucumbers and croutons. Mix in a sweet vinagrette.

You could also boil up some noodles and add the baby corn, tomatoes, cucumber and croutons with an Italian dressing...yummy!

A simple great salad is butter lettuce, fuji apples, candied walnuts, goat or blue cheese and raspberry vinaigrette, people will rave about the salad.. oh and adding some crunchy bacon wouldn't hurt.

I think it sounds delicious! Most of these things have a lot of flavor so combine a tablespoon balsamic vinegar, 3 tablespoons olive oil for the dressing. Sounds yummy!

sounds like you don't need ANY ideas, it sounds yummy already. maybe some mandarin oranges and a light dressing just olive oil, balsamic, s&P.
