I work in a school and our kids have to make this themselves as easily as possible, we obviously guide and help them (they are only 3). But I was told we could somehow make a sweet potato dish with canned yams, brown sugar, and marshmellows. Can anyone supply me with a recipe similar to this? Thanks.

I just had a really easy way of doing them at supper tonight. I take a medium size one and rinse it and then run water on it to leave it dripping wet. Next I wrap it in that clingy plastic food wrap so it is completely covered. I microwave it for about 5 minutes. It steams itself in the wrap so it can always come out done without having to be precise on the cooking time.

I let it cool a little, snip off the plastic wrap, and then slice it into quarter inch thick disks. If I wanted to fancy it up I would dip each slice in cinnamon-sugar and top with tiny marshmallows while it is still warm.

It doesn't get much easier than that and it tastes and smells great.

This is a recipe from Paula Deen for Sweet Potato Balls.

We had then last year and they are really yummy. We didn't add the coconut, and they were just great!

4 large sweet potatoes
2/3 cup packed brown sugar
2 tablespoons orange juice
1 teaspoon orange zest
1/2 teaspoon freshly grated nutmeg
2 cups shredded coconut, sweetened
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 large marshmallow per potato ball

Preheat oven to 350 degrees F.
Bake the potatoes until tender, then peel and mash them. Stir in the brown sugar, orange juice, zest and nutmeg. In a separate bowl, toss the coconut with the sugar and cinnamon. Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball. Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.

Drain the sweet potatos, place in a baking dish. sprinkle brown sugar over the potatos, and dot with butter. Place marshmellows on top, put in the oven 325--350 degrees for about 1/2 to 1 hour. Make sure they are heated through.

This is so yummy, here is the recipe:
2 cans (16 oz. each) cut yams
5 tabelspoons butter
1/3 cup brown sugar
1 cup miniature marshmallows

Drain yams and put in baking dish. Then in a suacepan melt butter and brown sugar together and pour over yams. Then sprinkle marshmallows evenly over yams and bake in oven at 350 degrees until mashmallows are lightly golden.
Enjoy.

INGREDIENTS
1 (40 ounce) can sweet potatoes, drained
1 cup white sugar
2 eggs
1/3 cup milk
1 teaspoon vanilla extract
1 cup packed brown sugar
1 cup chopped pecans
1/3 cup all-purpose flour
2/3 cup melted butter


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Butter one 2 quart baking dish.
Heat, drain and mash sweet potatoes. Combine with them with the white sugar, eggs, 1/3 cup of the melted butter, milk and vanilla. Place in the prepared baking dish.
In a separate bowl combine the brown sugar, chopped pecans, flour and 1/3 cup of the melted butter. Sprinkle over the top of the sweet potato mixture. Bake at 350 degrees F (175 degrees C) for 35 minutes or until a knife inserted near the center comes out clean.

Empty a can of yams into a casserole dish drain first...you can leave them whole or smash them, or cut them up into bite size pieces. Sprinkle with dallops of butter, brown sugar, cinnamon, nutmeg, a little orange juice and marshmallows. Put in oven at 350* for about 30 min. or until potatoes are warmed through Put your marshmallows on last so just to melt them over potatoes and brown a little.

Stuffed Sweet Potatoes with Pecan and Marshmallow Streusel


12 large sweet potatoes
3/4 cup (11/2 sticks) unsalted butter, at room temperature
3/4 cup light brown sugar
3/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup toasted pecan pieces
1 cup miniature marshmallows

Preheat the oven to 400 degrees F.
Wash the sweet potatoes, scrubbing them well to remove any dirt. With a fork, prick the sweet potatoes in a couple of spots and place them on a sheet pan. Bake for about 45 minutes, or until a knife inserted in the center goes in easily.

In a large bowl, mix the butter, brown sugar, and flour together until it's crumbly-looking. Add the cinnamon, salt, pecans, and marshmallows; fold the streusel topping together to combine.

Slice the sweet potatoes lengthwise down the center and push the ends towards the middle so it opens up. Stuff the sweet potatoes generously with the streusel topping and return to the oven. Bake for another 20 minutes, or until the topping is bubbly and brown.

You mix the brown sugar and the yams together till they are all mushy-like. then you top them with a bunch of marshmellows and bake till the mellows are light brown.

just mash the yams with the brown sugar and put marshmellows on top, throw in the oven til they mellows turn a little brown.

*Mom's Sweet Potatoes*
Ingredients:(to make one of these potatoes)
1/2 an orange-all stuffed taken out so just the rind remains in a bowl shape
enough sweet potatoes to fill the orange half
put in however many marshmallows, raisins and brown sugar as you want (:
mix it up.
stick mixture in orange rind.
put in oven for idk...15 min?
(u might wanna check on them every once and awhile)
take them out.
put them in the fridge 'till ur ready to serve them.
