What is the best replacement for milk in my oatmeal cookie recipe...it only calls for one tablespoon so I don't want to buy a whole container of milk. I have rice milk, orange juice, and of course water...what do you think?

The recipe I use does not contain milk. I'd melt a tablespoon of butter in it's place.

Since you have rice milk, use that. Otherwise, I think soy milk is best. When mixed in a recipe that calls for cow milk, you cannot tell any difference.

or - you could make your own almond milk

nah - not for a table spoon

I use a cup for my muffins - and throw the nuts that are used
into the recipe for the muffins as a bonus!

soak 3/4 cup of almonds for 4-8 hours
pour the water off
place almonds in blender
add 1 cup water
LIQUEFY!!!!!!!
pour mixture into recipe ( to be safe your first time -
use a strainer and measure out your 1 cup -
then pour the rest thru into another container - or discard -
then take the strainer and dump it into the batch of health muffins
