The proper ettiquette thing to do is genlte look at your guest, and either say or indicate "do what I do". This gives them a chance to learn without making it obvious they don't know. You can also tell them "From the outside in", but do it quietly, so you don't embarrass them.

I was in a Japanese resteraunt once, and a young girl at the table across from me was having trouble with ehr Chop Sticks. I leaned over and showed her, very quietly, how to used them. She smiled and got the hang of it very quickly, and dinner wasn't disrupted. As I was leaving, her parents came up to me and thnaked me profusely.

Taking all the stuff off the table, though a grand gesture, makes it obvious to everyone that they don't know what they are doing and deprives them of an opportunity to learn something that;s actually kind of cool and useful when you least expect it.

Looking away in disguse makes you look like a jerk. Yo invited someone out to humiliate them? And other diners notice when you do things like the. Your the one who looks bad. If I was in a place and saw that, I might be tempted to walk up to the girl and ask her to jion me at my table so she might eat with civilized people. Dinner on me, of course. :)

D. Assuming I knew which one to use at a FANCY meal, I would pick up the correct utensil and eat...ignoring the fact that she may use another one.
