Mushroom Roast Beef Tarlet Appetizer Recipe

Makes 24 appetizers

Tartlets (recipe below)
Mushroom filling (recipe below)
1/4 pound deli roast beef, thinly sliced, cut into small pieces
Brie cheese, rind removed
Parsley, garnish (optional)
Garnish with half slices of oranges and halved red grapes, garnish (optional)

Spoon mushroom filling into tartlets, add roast beef and Brie cheese. Garnish with parsley, orange slices, grapes and serve.

Mushroom filling
4 ounces Shiitake Mushrooms, chopped finely
4 garlic cloves, minced
2 tablespoons butter
Salt and pepper, to taste

In a saucepan over medium high heat sauté mushrooms and garlic in butter until liquid has evaporated; add salt and pepper.

Tartlets
(can be made 2 days ahead)
12 slices thin white bread, crusts removed and rolled flat
butter for greasing muffin tins

Cut two 3-inch circles from each bread slice; press neatly into 2 greased mini muffin tins. Bake at 370° for 7 minutes or until lightly browned.

Apple Cheese Log
8 ounces cream cheese, softened
1/2 cup finely chopped tart apple
1/4 cup chopped pecans
1/4 teaspoon ground cinnamon
Additional chopped pecans, toasted Vanilla wafers, sugar cookies or assorted cracker.

In a bowl, combine cream cheese, apple, pecans and cinnamon. Shape into a log; roll in toasted pecans. Cover and refrigerate. Remove from the refrigerator 20 minutes before serving. Serve with vanilla wafers, cookies or crackers.

Cranberry Meatballs
1 pound ground beef
1/2 cup bread crumbs
1 egg
1 teaspoon instant minced mustard onion
1/4 teaspoon dry mustard
salt and pepper
butter
8 ounces tomato sauce
1 pound can of whole cranberry sauce

Combine ground beef, bread crumbs, egg, minced onion, mustard, salt and pepper. Shape meat mixture into ping pong size balls and brown them in butter, in a frying pan that has a lid. Mix together tomato sauce and cranberry sauce. Pour over the browned meatballs, then cover and simmer for about 30 minutes.

Helen’s Bread Dip
This really is good



1/3 cup light mayo/salad dressing
1 ½ cup fat free sour cream
¾ # lean corned beef, chopped fine
2 tsp beau monde spice
2 tsp dill weed
2 tbls chopped onion
2 tbls dried parsley


Mix all together and refrigerate at least 2 hours.

I loaf of round, pumpernickel bread. Hollow out the bread into a bowl, cutting the pieces into dipping size. Put the dip into the hollowed out bowl.

Note: Beau monde spice is difficult to find. An acceptable substitute is Celerbration, available online from www.obiecue.com


Pecan Cream Cheese Ball

2 - 8 ounce packages cream cheese – softened
1 – 8 ½ ounce can crushed pineapple, drained
2 cups (7 ½ ounce bag) pecans, chopped
¼ cup finely chopped green pepper
3 tsp finely chopped onion
1 tsp seasoned salt

Mix all; form into 1 large or 2 smaller balls. Can be frozen.


Spicy Spinach and Artichoke Dip

½ cup (1 stick) butter or margarine
1 medium onion, chopped, 1 cup
2 – 10 ounce packages frozen spinach, thawed and well drained
1 – 14 ounce can artichoke hearts, drained and chopped
1 – 8 ounce package cream cheese
8 ounces sour cream
1 cup shredded Monterrey Jack cheese, divided
1 cup grated Parmesan cheese, divided
2 tbsp Tabasco sauce
Salt to taste
Corn chips or crackers


Melt butter in large saucepan or skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in spinach, artichokes, cream cheese, sour cream, ¾ cup Monterrey Jack cheese, ¾ cup Parmesan cheese, Tabasco sauce, and salt. Stir until well blended and heated through. Pour mixture into a ½ quart casserole dish and top with remaining cheeses. Bake in a 350 oven until cheese starts to brown. Serve with corn chips or crackers. Makes about 4 cups.

1 lb fillo dough
1 lb feta cheese crumbled
6 eggs
2 cups milk
½ cup olive oil
3 sticks unsalted butter

In an 11*14 in glass Pyrex pan, add 3-4 fillo leaves, brushing each with olive oil. Place 1/3 of feta cheese on leaves and top again with 3-4 fillo leaves brushing each with olive oil. Add 1/3 of feta cheese on top and top with 3-4 fillo leaves brushing each with olive oil. Add the last 1/3 of the feta cheese and top with the remaining fillo leaves, brushing each leave with olive oil.

Cut Tiropita in squares. For the top mix the 6 eggs slightly with milk and pour it on top of fillo. Bake 350 degrees for 35-40 minutes.

Directions:

* Boil the lamb (or any meat you want) in lightly salted water.
* Cut the meat into little pieces.
* Season to your liking (salt, pepper, oregano, etc...)
* Add sautéed onions and garlic if desired.
* Mix the meat with various cheeses (swiss, mozzarella, kefalograviera)
* Spread the mixture onto oiled fyllo pastry (you can make your own or buy ready made, but ALWAYS USE OLIVE OIL as this is a Cretan recipe) .
* Roll up the fyllo, taking care to tuck in the sides as you go.
* Bake it until golden brown, about 1/2 hour.

SPANAKOPITA

Recipe for Traditional Greek Spinach and Feta Cheese Pie

* Featuring Organic Extra-virgin Olive Oil and Fine Grey Sea Salt *


Organic Vegie Sea Salt

2 lbs. fresh spinach leaves

1/2 cup chopped fresh parsley

1/2 cup chopped fresh dill

2 cups finely chopped green onions

1 1/2 tsp. fine Fine Grey Sea Salt

1/4 cup Organic Extra-virgin Olive Oil

3 cups chopped onion

1/4 tsp. coarse ground black pepper

1/2 lb. feta cheese, crumbled (traditionally made from sheeps milk, feta cheese from goat milk is also good)

14 filo leaves (usually sold frozen, thaw thoroughly!)

3/4 cup clarified butter (ghee), melted.


1) Wash and clean the spinach. Discard the stems. Drain & cut the leaves into shreds.

2) Combine the spinach, parsley, dill, green onions and grey sea salt in a bowl. Let stand for 15 minutes, then press out all of the liquid.

3) Heat the extra virgin olive oil in a skillet and saute the 3 cups of chopped onions until soft and transparent. Add the spinach mixture from step 2 and saute for a few more minutes. Add the feta cheese and black pepper.

4) Place each of 7 filo leaves in a buttered 10" x 17" x 2" baking pan, bruhing each leaf with melted clarified butter. Add the spinach mixture from step 3, spread into a thick layer then add remaining filo leaves, again brushing each leaf with melted clarified butter. Cut into 3"x 3" pieces with a sharp knife.

5) Bake at 375 degrees for 30 minutes or until golden brown.
