BROWN AND WILD RICE

1/2 c. wild rice
1/4 tsp. sage
1 c. wine
20 oz. chicken broth
1 c. brown rice
1/4 tsp. thyme
1/4 c. butter
1 sm. can mushrooms, drained

Heat oven to 350 degrees. Wash and drain wild rice. In ungreased 2 quart casserole combine all ingredients. Cover and bake at 350 degrees for 1 hour. Remove cover. Continue baking 45 minutes or until rice is tender and liquid is gone.

Roast duck is a rather fatty meat, and it's traditionally served with a fruit-based sauce, such as peach, apricot, cherry, cranberry, or others--a sort of sweet-and-sour flavor. Oven-roasted or fried potatoes would be good, or buttered noodles, and whatever vegetables you like.

Usually I go with something like rosti potatoes, sautéed spinach and roasted carrots.

That said, the recipe I'm linking to suggests duck breast with smoked potatoes, glazed baby turnips, leek crisps with buttered winter greens and duck jus.
It looks Good!

me mum cooks the duck halfway and pours off the fat, then places it on a bed of washed and uncooked rice with some stock and slices of chorizo scattered around. It comes out like a risotto its amazing!

If you collect the fat that came from the duck, you could cook tiny potatoes and carrots in that fat (slowly, you do not want to fry them, but boil them).

Duck fat has the advantage of being less damaging than fats from other animals, as long as you don't overheat it.

same as with roast beef prehaps. maybe rice and orange sause. ginger goes well too.
it really doesnt matter,just put it with whatever you fancy.
