I am always asked to make and bring my homemade Irish Creme Fudge to holiday get togethers. I also make this using Kahlua, brandy, Kirsch, spiced rum or other liqueurs and add nuts and/or fruits that compliment the chosen liqueur.
Irish Crème Fudge
3 sticks of butter (3/4 pound)
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray
In a 3 quart sauce pan - preferably enameled cast iron - melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.
Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.
Pour mixture into pans and cool thoroughly before cutting into squares and serving.
Apple-Cherry Cobbler
6 to 8 servings
Prep: 20 minutes
Bake: 8 to 10 minutes
Cook: 6 to 7 hours
Ingredients
1/2 cup granulated sugar
4 teaspoons quick-cooking tapioca
1 teaspoon apple pie spice
1-1/2 pounds cooking apples, peeled, cored, and cut into 1/2-inch slices (4-1/2 cups)
1 16-ounce can pitted tart cherries
1/2 cup dried cherries
1 recipe Spiced Triangles
Ice cream, such as butter pecan or cinnamon; or half-and-half; or light cream (optional)
Directions
1. In a 3-1/2- or 4-quart crockpot stir together sugar, tapioca, and apple pie spice. Stir in the apple slices, undrained canned cherries, and dried cherries until combined.
2. Cover; cook on low-heat setting for 6 to 7 hours or on high-setting for 3 to 3-1/2 hours. To serve, divide cherry-apple mixture among 6 to 8 shallow dessert dishes. Top with Spiced Triangles and ice cream or half-and-half, if desired. Makes6 to 8 servings.
Spiced Triangles: In a bowl combine 1 tablespoon sugar and 1/2 teaspoon apple pie spice. Unroll 1 package (8) refrigerated crescent rolls. Separate triangles. Brush tops with 1 tablespoon melted butter and sprinkle with sugar-cinnamon mixture. Cut each triangle into 3 triangles. Place on an ungreased baking sheet. Bake in a 375 degree F oven for 8 to 10 minutes or until bottoms are lightly browned. Remove to a wire rack to cool.
Peach-Berry Cobbler
9 servings
Prep: 25 minutes
Bake: 20 minutes
Ingredients
4 cups sliced, peeled fresh peaches or one 16-ounce package frozen unsweetened peach slices, thawed
1/4 cup cold water
2 tablespoons sugar
4 teaspoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon ground allspice, cardamom, or cinnamon
1 recipe Biscuit Topping (see recipe below)
2 cups fresh raspberries or frozen lightly sweetened raspberries, thawed
Directions
1. For filling, in a medium saucepan, combine peaches, the water, sugar, cornstarch, lemon juice, and allspice, cardamom, or cinnamon. Let stand for 10 minutes.
2. Meanwhile, preheat oven to 400 degree F. Prepare Biscuit Topping.
3. Cook and stir the peach mixture over medium heat until thickened and bubbly. Stir in the raspberries. Heat through, stirring gently. Transfer the hot filling to a 2-quart round or square baking dish.
4. Immediately drop the Biscuit Topping into small mounds onto the hot filling.
5. Bake about 20 minutes or until browned and a toothpick inserted into topping comes out clean. Serve warm. Makes 9 servings.
Biscuit Topping: In a medium bowl, combine 1 cup all-purpose flour; 2 tablespoons sugar or sugar substitute* equivalent to 3 tablespoons sugar; 3/4 teaspoon baking powder; 1/4 teaspoon baking soda; 1/4 teaspoon ground allspice, cardamom, or cinnamon; and 1/8 teaspoon salt. In a small bowl, stir together 1/3 cup plain low-fat yogurt; 1/4 cup refrigerated or frozen egg product, thawed, or 1 egg, beaten; and 2 tablespoons butter or margarine, melted. Add egg mixture to flour mixture, stirring just until moistened.
Lime Jell-O Mold
1 large box Lime Jell-O
8 ounces Cream Cheese - room temperature
1 can Crushed Pineapple - chilled
1 16 ounce container of Cool Whip or fresh whipped cream
Drain pineapple saving liquid to use in Jell-O. Make Jell-O using the quick-set instructions replacing some of the cold water with the pineapple juice. Make sure gelatin is well dissolved. Place in fridge until semi-set. In a blender combine cream cheese and pineapple until well blended. Mix into semi-set Jell-O than fold in Cool Whip. Pour into a gelatin mold and refrigerate until set or over night. To serve, unmold onto a plate large enough for the mold.

Thanksgiving Dessert
2 eggs
1 (19 ounce) can pumpkin pie filling
1 (12 ounce) can condensed milk
2 teaspoons cinnamon
1 teaspoon nutmeg
1 (18 ounce) box yellow cake mix (9x13 size)
1 cup butter, melted
In a large mixing bowl,whisk the eggs.
Stir in the pumpkin pie filling, condensed mik and spices.
Pour into a greased 9x13 pan.
Sprinkle the DRY cake mix over the pumpking mixture.
Carefully pour the melted butter over top.
Bake at 350 for 50-60 minutes until set.
Cool to room temperature then refrigerate.
Serve with Cool Whip on the side.

This one is easy and fool proof.
4 eggs
1 1/2 c. sugar
1 Lg. can evaporated milk
1 can pumpkin
1 t. cinnamon
Pumpkin Pie Sort of
Mix the above in order.
Pour into a 9x13 baking dish
sprinkle w/ 1 yellow cake mix
sprinkle that w/ 1 to 1 1/2 cups chopped pecans
drizzle w/ 1 cup melted butter.
Bake at 350 for an hour.
This is really good and easy. A new way to do pumpkin pie

Cranberry salad! Really yummy 1/2 cup to a cup chopped craberrys (depends on if you really like craberrys or not) 1 package strawberry jello Make the jello like the recipe calls for add the cranberrys before you stick in the fridge. Easy and yummy... You can add mini marshmellow too if you want. You can also add chopped walnuts or pecans... You could also do Lime jello with cottage cheese and pinapples (not my favorite but people like it)

Orange Jello Salad
1 large pkg. orange jell-o
12 oz. Cool Whip
8 oz. cottage cheese
1 large can crushed pineapple, drained well
1 can mandarin oranges, drained well
Make sure the fruit is drained very well. Mix the dry Jell-o and the cool whip in a large bowl. Fold in cottage cheese gently. Fold in pineapple and oranges. Refrigerate and serve.
No cooking. But it is delicious!!

i suggest a bakers square pumkin pie . get a cool whip / or fresh cream topping. or you could apple pie.
maybe an appetizer , sliced vegies tray / dip ? deviled eggs
might be best to just ask your hostess /aunt what she needs / if she has coordinated.
cranberry sauce is always easy . the boston chicken sells a wonderful one.

5 Tbls. butter OR margarine - divided
