i WOULD TAKE LEMON JUICE, LIME JUICE AND MAKE A MARINADE... LET IT SOAK IN THE FISH FOR A FEW HOUR IN THE FRIDGE, PUT THE FISH IN A BROILER PAN
POURING THE JUICE ON TOP EVERYTIME YOU CHECK IT.... THE COOKING TIME VARIES AS TO THE SIZE OF THE FISH, STEAM SOME RICE, AND BROCCOLI
SERVE WITH A GREEN SALAD....

Baked Tilapia with White Wine & Herbs 2 fresh Tilapia fillets, approximately 8-10oz each 150ml (1/4pint) medium white wine 1-2 cloves garlic, finely chopped 4 tablespoons freshly chopped mixed herbs 6 salad onions, diagonally sliced salt and freshly ground black pepper 1/2oz butter 1 teaspoon cornflour, blended with a little cold water 2 tablespoons creme fraiche Arrange the Tilapia side by side in a lightly oiled roasting tin or ovenproof dish. Pour over the wine, then sprinkle over the chopped garlic, most of the herbs, the salad onions and seasoning to taste. Place half the butter on each fish. Cover with a sheet of lightly oiled foil, seal in the fish then bake in a preheated oven 350F, for 30-35 minutes. Transfer the Tilapia to a serving dish and keep warm. Pour the juices into a pan, stir in the blended cornflour and simmer for 2 minutes. Stir in the creme fraiche, pour over and serve immediately, sprinkled with the remaining herbs. Cooking Time: Approximately 35 minutes Serves: 2 It really just depends on your taste. Good luck!

Here's a few easy but good recipes.

"Tilapia w/ Mango Salsa"( Makes 4 - servings)

4 - 4oz. Tilapia fillets
1 tsp. Chili Powder
1/2 tsp. Black Pepper
1/8 tsp. Salt
1 TBsp. Olive Oil
1.Combine chili powder,salt, pepper; Sprinkle on both sides of fillets.
2.Heat oil in large skillet over med. heat. cook fillets 3 - 5 mins. per side or until fish flakes in center
Mango Salsa:
1 c. Mango, chopped into small pieces
1/4 c.Orange or Pineapple Preserves
You can use Sugar -Free Preserves if Diabetic
1/4 c.Red Bell Pepper,chopped into small pieces
1 TBsp. Green Onion,chopped
2 TBsp. fresh Lime Juice or fresh Lemon Juice
2 TBsp. fresh Parsley,chopped
1.Combine all salsa ingredients in a small bowl.Mix well, Chill for at least 30 mins. before serving.
2.Serve each fillet with 1/3 c. Salsa
Rice & Steamed Veggies,your choice

"Baked Tilapia w/ Veggies in Pouch"
Makes 1 individual serving

1 - 4oz. Tilapia fillet
2 TBsp. fat - free Ranch Dressing
Dash of Paprika or ground Cayenne Pepper
1/2 Red Bell Pepper, sliced
1small Onion, finely sliced
1/2 c. fresh Broccoli Florets

1.Preheat oven to 450*.
2. Spray a 12" piece of Heavy -Duty foil with non-stick cooking spray.Place fillet on foil & spread the Ranch Dressing over fish. Sprinkle with a dash of Paprika or Cayenne Pepper.
3.Arrange Broccoil over fillet.Fold foil & seal all the edges.
4.Place foil in middle of oven, directly on rack or on outside grill with lid closed.Cook about 25mins
Check fillets.It should be white & flakey.If not cook 5 mins longer.

My mom makes really good tilapia. She often serves it with fresh asparagus and lemon, or white rice. :] Good luck! You don't need to feel that you need to follow a recipe from a cook book. The more original and creative it is, I guarantee it'll taste better. :]

Tilapia is good batter dipped and fried but that is a lot of trouble and calories...bread it in crushed potato chips...just dip in beaten egg and then the chips and bake it at about 350F degrees in the oven...sprinkle a little dried herb on it if you like and salt and pepper before the chips...have steamed broccoli with it or a salad of some sort...a potato too if you like...

well for the fish, probably butter dill and lemon. for the side creamed spinach is always a fave at my house! i found the copycat recipe for boston markets creamed spinach and it is to die for!
Serves: 6-8
Prep. Time: 0:35

5 Tbls. butter OR margarine - divided
1/4 cup all-purpose flour
1/4 tsp. salt
1/4 tsp. black pepper
1 dash ground nutmeg
1 cup half and half cream
4 oz. cream cheese - low-fat okay
1 sm. onion - minced
3 cloves garlic - minced
(2) 10 oz. pkgs. frozen chopped spinach - thawed
1/4 cup water
1/4 cup grated Parmesan cheese

-In a 2-quart saucepan over medium-low heat, melt 3 Tbls. butter; stir in flour, salt, pepper, and nutmeg; slowly whisk in cream; stir in cream cheese.
-Increase heat to medium; whisk mixture constantly until thick and smooth; remove from heat and set aside.
-In a skillet over medium-high heat, cook onions and garlic in remaining 2 Tbls. butter until transparent; stir spinach and water into pan.
-Reduce heat to medium-low; cover; simmer, stirring occasionally, for 8 minutes.
-Stir spinach mixture into creamy mixture; return to medium heat; heat, stirring often, until warmed throughout.
-Remove from heat; fold in Parmesan.
