arroz? What texture is right ?

Arroz is the spanish word for rice. There are different types of rice which are cooked in different ways. But if you have a bag with the word "arroz" on the label then I assume you mean long grain rice because that is the type of rice used for Spanish rice. You don't need to pre-soak it or saute it, but here is how I make it:

Melt a tablespoon of butter in a saucepan. You can substitute a tablespoon of oil. Pour in one cup of rice and saute for a few minutes. Pour in two cups of water or broth. If you are using water for plain white rice, add a half teaspoon of salt. Add any seasonings--herbs and spices--you like (you didn't say if you wanted Spanish rice or not.) Bring to a boil, then cover and lower temperature to low. Simmer until done, about 15-20 minutes. Let it sit for five minutes, then fluff with a fork.

I cook rice in the microwave, 12 to 15 mins with a little less water than on the bag. So mif it is undercooked, i put a tad more water and cook for another 3 mins. Rice should be firm, not mushy
