Everything goes with bacon. I am wearing a bacon blouse right now.

Swiss Egg with Bacon and Mint

3 Eggs
2 slices of bacon
5-10 small mint leaves
250g of cheddar cheese

Preheat the oven to 180 degrees C. Place 2 slices of cheese half the size of the dish so that the bottom cannot be seen. Place all three of the eggs on top of the cheese and season with salt and pepper. Then fry (or grill) the two peices of bacon and when cooked place on top of the eggs. Place 2 cloves of garlic and the mint leaves to give the dish a boost in rich flavour for 25-30 mins. Once cooked sit back and enjoy!!!.

Peas With Smoked Crisp Bacon and Mint

6 strips smoked bacon (about 1/2 of a regular-size package)
1 package frozen peas
Handful of fresh mint, washed and dried
Salt and pepper to taste


Method
1. Cut the bacon into small pieces. Heat a skillet to medium-high and sauté the bacon until brown.
2. Add the peas to the pan and cook until bright green and heated through.

3. While the peas are cooking, remove the mint leaves from their stems, bunch them all together, and slice into thin strands.

4. Transfer the peas and bacon to a serving bowl and toss with the mint, salt, and pepper. Serve hot.

Never. They're both too strong a flavor.. it would be overwhelming and contradictory. That's why mint goes well with lamb.. It's a white meat and very mild.
