My favorite:

2lbs hamburger
3/4 c. breadcrumbs - I use 1/2 roll ritz crackers
1/2 c. ketchup
1/4 c. onion
1/4 c. green pepper (about 1/4 of a normal pepper)
1/2 tsp. salt, 1/2 tsp pepper
2 eggs beaten

Mix all that together. Form the meatloaf, top with ketchup and spread aroud with a knife. Cook at 350 degrees for 1 hr.

I hope that's all right, it's from memory, but I've made it a decent number of times.

Meatloaf

3 pounds lean ground beef
3 eggs
1 packet Lipton Onion soup mix - any type - I like the Mushroom Onion flavor
Italian Style bread crumbs
Grated Cheese - I like a mix of both Italian style and chedder jack
Salsa or BBQ sauce

Mix all ingredients being careful to use just enough bread crumbs to bind the mixture - too much and the meatloaf will be dry. Bake at 350 degrees F for 1 1/2 hours - let sit 10 minutes before removing from loaf pan and serving.

My meatloaf is the only one my Mom will eat so I had to teach my kids how to make it too.

When I cook dinner or supper, I don't usually measure so bear with me.
1 lb ground beef
1/4 brown onion, diced
1/2 package or 4 oz. mushrooms, chopped
1 stalk celery, diced
1 can tomato sauce or use 1/2 can of stewed tomatoes
6 soda crackers, crushed to crumbs
salt and pepper to taste
2 teaspoons rosemary
1 egg

Preheat oven to 350°F.

In a large bowl, mix all of the ingredients together with your hands. If you use the stewed tomatoes instead of the sauce be sure to add enough juice from the can to moisten the ingredients, usually about 5 tablespoons.

For a less intense onion flavor, sautee onions just until the onions turn transparent. Cool briefly then add to mixture.

Shape into loaf, as best you can, and place into loaf pan. Bake for 1 hour.

I like to mix half ground pork and half ground beef. It adds a lot of flavor.

Use 2 pounds ground, 3/4 cup bread crumbs, 2 TBSP Worcestershire sauce, 2 eggs, 1/2 cup minced onion, 1 1/2 tsp. salt, 1 tsp. black pepper.

I mix all together and spread in bread pan and bake at 350% for about and hour. The last 15 minutes I pull it out, drain off the grease and coat the top with Ketchup and return to the oven to finish. Let stand a few minutes after pulling it out and then slice and serve.

Yummy!

Good ground beef - about 1.5 lbs
One 'sleeve' of saltine crackers.
2 eggs.
Milk
Onion
Salt & Pepper
Bacon

Take the crackers and crumble in bowl, add the eggs and enought milk to make very, very wet. It should look live very loose oatmeal. Then stir in your chopped onion and salt/pepper. Mix in the meat and place mixture in a greased 8x8 pan. Lay the bacon slices on top of meatloaf. Bake at 350 for about 40 minutes. Check for doneness with a knife tip. If it is still pink, cook longer.

My husband and kids love my meatloaf and it's so easy. I use the McCormick meatloaf seasoning, 2-3 lbs of grd chuck, 1 egg, 2 slices of bread crumbled (I use the blender) 1 chopped onion and 1 chopped bell pepper, mix in half of a small can of tomato sauce use the other half on top. Bake at 350 for 1 hr. I hope you love it!

I like to substitute one cup of Stovetop Stuffing mix for the bread. Rest of recipe is the same. I use one cup catsup, 2 TBS brown sugar and 1 tsp ground mustard mixed together for the topping. Add it when it is about 15 minutes from done.

I mix together 3 pounds of hamburger with 1 cup of bread crumbs, 1 egg and 1/2 cup of milk. After it's mixed and shaped in the pan I put a mixture of 1 cup of Ketchup, 1/2 cup of light brown sugar and 2 tsp dry mustard or 2T yellow mustard. I bake this at 375 for an hour.
