Yummy Crispy Baked Fish
1 lb tilapia fillets
Milk mixture
1/4 cup milk
1/2 teaspoon vinegar
1 tablespoon brown mustard or honey mustard
Breading
1/2 cup cornmeal
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper, adjust to your taste
Garnish
lemon wedges
Mix milk, vinegar and mustard and let set for 15 minutes. This will make a mustardy, buttermilky dressing to coat the fish.
In a separate bowl mix cornmeal with all the seasonings.
Dip fish fillets in the milk mixture and then in the cornbread mixture.
Spray broiling pan with cooking spray or brush with a little olive oil.
Place fillets on prepared pan and place pan under broiler 4 inches from heat.
Broil for 4 minutes per side or until fish flakes easily with a fork.
Serve with lemon wedges if desired.

Quick Easy Poached Salmon Salmon filet skin removed Cut into bite sized pieces 3x3 or so 1/2 cup water seasoned with 1/2 tsp chicken soup base powder 1/2 tsp lemon juice Bring above ingredients to simmer or low boil in non stick fry pan place salmon pieces into pan cook about 3 minutes on each side Turn off burner and cover and remove from stove Serve after 5 minutes with your choice of side. EASY TARTAR SAUCE 1/4 cup Kraft Miracle Whip Add 1 tsp green sweet relish Serve as a garnish on fish.

potato chip tuna casserole
1 (11 1/2 ounce) bag jay's potato chips
1 (7 1/2 ounce) can tuna
1 (10 2/3 ounce) can cream of mushroom soup
milk
Tuna Main Dish
Make soup according to directions on label.
In a casserole dish: put a layer of potato chips on bottom.
Alternate with layers of tuna to end up with 3 layers of tuna; 4 layers of chips.
Pour soup over all. Add another layer of chips on top.
Bake in a 350° oven (uncovered) for 15 minutes.

As a treat when i was in uni i used to buy one of those little packs of smoked salmon in tesco, sometimes they had it in the lidl near me, I'd break it up, fry it with some onion and red pepper, pour in half a jar of tomato pasta sauce and a dribble of cream if i could find the cash for it and have it with pasta.
Now I'm finished Uni i love to fry some fresh salmon with a touch of nutmeg, put it in an oven proof dish, i like to add spinach but add any veg you like pour over some cream, season with salt and pepper, put some fresh lasagna sheets over the top and grate on some cheese, and bake for recommended time on pasta pack. you can use dried pasta but pre cook it till flexible in well salted and well oiled water.

I used to not cook fish becuase I was leery about how to cook them. Until I found the steaming Glad or Ziplock brand bags. I throw my frozen (or fresh) fish into the steam bags and microwave them according to the directions on the bag. I use different seasonings. one seasoning I use is a Seafood Rub I found on the spice aisle. I have also used Italian seasoning, and Lemon-Pepper and lemon juice. Sometimes I just salt and pepper. But the bags have definitely changed my life when it comes to cooking fish! (I use them for other things too). Frozen salmon takes FOUR minutes to cook in the bag!

Home Made Fishfingers - buy a fillet of cod (or your prfered fish) from the fishmongers and slice it into stips..
For the batter:
1 cup plain flour
1 cup beer
2 egg whites, whipped to soft peaks
Salt
Coat the strips of fish in batter and deep fry in a pan of sunflower oil for a few minutes until golden brown...
You could even make your own chips (by slicing potatoes and deep flying) and mushy peas....
Yum! (and fattening) :)

I love Snapper baked with tomatoes and garlic chopped on top. You just filet the fish (or you can leave it whole) and chop a tomato or two and a clove or two of garlic and place on top. Then bake.
If you are defrosting catfish, defrosting it in milk can remove some of the fishy taste.
Try Red Snapper, though, there are tons of great recipes on the internet. you can even make a ceviche with it that is wonderful.

Salmon is my favorite. You can bake steaks or fillets in foil or parchment. Rinse and dry fish, brush with olive oil and place in the center of a sheet of foil or parchment paper set on a baking sheet, sprinkle with salt and pepper and drizzle with lemon juice and/or white wine. Toss in some fresh or dried herbs if you like. Seal foil or parchment over fish and bake in a 350 degree oven for about 8-12 minutes (depending on thickness), or until it is just opaque in the center. Don't overcook!

Fish pie: fillet and chop into small pieces various types of your favourite fish. Cook in a deep pie dish and top with mashed potato and cheese.
Or a simple fish salad. Lettuce, cucumber, grated cheese, egg, tomato, silversin onions, fresh lightly smoked salmon fillet (from fishmonger counter at supermarket) and a nice door-stop wedge of bread.
