Is each chapter written by a different author? If not, just cite the book. MLA format does it this way:

In parantheses after the passage you want to cite, simply put the author's last name and the page number. (You'll do this no matter what kind of source you're citing, as long as you know both bits of information.)

Then, at the end, give a full bibliographic citation for the book--Doe, John. Title of Book. City of publication: Publisher, year.

If this item takes more than one line, indent the second (and third, if there is one).

If each chapter is by a different author, do it this way:

Doe, John. "Title of Chapter." Title of Book. Ed. Rachel Roe. City: Publisher, year. pages.

Give the page numbrs of the chapter from beginning to end here.

If the audience you're writing for wants footnotes or endnotes instead of parenthetical documentation, ask again.
