I have a short hair female Chihuahua, who gave birth to two puppies, that we are going to keep as our own, 3 months ago. This was her first and last litter{SHE IS NOW SPAYED], and before she gave birth, she had an extremely short coat. All of a sudden now, she has developed a thicker, beautiful coat, that is twice to three times as thick as it was before, and I love it. Does this have something to do with hormones? Just wondering why she would develop such a thick coat after giving birth! Has this happened to anyone else's dog?

Definately has to do with hormones. Estrogens, progesterones, etc are steroids. These have a negative effect on the body causing decreased immune function, poor hair growth, demodecosis, etc The hair growth has nothing to go with the birth - but everything to do with being spayed. Getting rid of the hormones has made her hair grow better. In fact we call baldness or hairloss in intact dogs (especially in males) Alopecia X. Once neutered or spayed, the hair grows back.

Actually this is likely from being spayed. One of the main objections to allow spayed female to show is that in coated breeds that longer thicker coat will put everyone elses brood b!tches at a disadvantage.
