Yes. It is done all the time.

I have two such motors in my house.

One motor has 2 windings for 2 different speeds. Applying voltage to one set of windings and the motor runs at a slower speed. If voltage is applied to the 2nd set of windings the motor runs faster.

The other motor in my house has 2 windings for 2 different voltage standards (120V or 240V). It can be configured to run at its designed speed, on either voltage.
