16 oz bag of finely shredded cheddar cheese
mix the refried beans with taco seasoning and spread into glass pie pan or shallow bowl...
combine cream cheese/sour cream.. Layer ontop of beans
Pour salsa on top of cream cheese/sour cream layer.... Top with cheese.. Refridgerate for at least 2 hours/overnight....
Serve with tortilla chips......
shrimp/cocktail sauce is easy....

bacon wrapped pork medallions with garlic mustard butter
Ingredients:
1 (1-1-1/4lb) pork tenderloin
4 slices hickory smoked bacon
wooden toothpicks
salt and pepper
Garlic-Mustard Butter
1/4 c. butter, softened
2 tsp. dijon mustard
1 clove garlic, minced
stir all ingredients together.Wrap in waxed paper and shape into stick shape.Chill while pork is cooking.Before serving, cut into fourths and top each pork medallion.
Method:
Cut tenderloin in 8 slices (medallions) approx. 1 to 1-1/4 inch wide. Place two slices together to make pork "mignons". Secure with toothpick. Repeat with remaining prok medallions and bacon. Season both sides with salt and pepper and spray lightly with cooking spray. Broil or grill per directions below. Remove wooden pick; serve with garlic-mustard butter (recipe above)
Broiling:
preheat broiler to 500 degrees. Broil about 4 inches from heat source for 7 to 8 minutes per side or until internal temperature reaches 160 degrees.
Grilling:
Preheat grill to 400 degrees. Place prok mignons directly over high heat. Close grill lid: grill 6 to 7 minutes per side or until internal temp. reaches 160 degrees.
