Cranberry Sauce
2 (12 ounce) packages fresh cranberries
1 orange, zested
3 cinnamon sticks
2 cups orange juice
2 cups packed brown sugar
In a medium saucepan, combine cranberries, orange zest, cinnamon, orange juice, and brown sugar. Add enough water to cover, and bring to a boil over high heat. Immediately reduce heat, and simmer for about 1 hour, or until the sauce has thickened. Taste for sweetness, and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool, then refrigerate in a covered container.

We have a tradition with Cranberry Sauce/relish in our family. Its very tart and crisp and fresh tasting. We think it's delicious though it might not be for everyone, most important is that we have always had and must have this at our thanksgiving dinner to carry on the tradition:)
We used to grind it in a hand cranked meat grinder but use the food processor now.
2 Bags of raw washed cranberries
2 oranges..quartered, one peeled one left with the peel
3 medium red apples skin left but quartered
1 to 1/2 cup chopped pecans
1 to 2 cups sugar.
Process fruit separately to a medium to fine chop and nuts and mix together, then stir in one cup of sugar and allow to sit in the refrigerator a few hours...then add more sugar to taste. It has to sit for awhile for the sugar to do it's magic on the fruit. Stir it occasionally in the frig until desired sweetness is obtained.
It can be made a day or so ahead and must be an old time recipe as its been in the family so long. I find it interesting because the cranberries aren't cooked.

Cranberry sauce with marmalade and cinnamon
1 1/2 cups orange marmalade
2/3 cups orange juice
1 cinnamon stick (2-3 inches) broken in half
1 12 ounce bag of cranberries
Combine marmalade, juice and cinnamon in a saucepan, stir over medium heat until it boils. Add the cranberries, return to boil, then reduce to medium and simmer, stirring occasionally, until the berries burst and the mixture thickens slightly. Cool and serve. Makes about 3 cups.
Delicious.

I used to make the homemade sauce every year.One year I made the homemade and taste tested it with the stuff in the can.It tastes exactly the same.Save time use the canned stuff :)
BTW, everything else was homemade tho.
