A scoop is a special spoon designed for ice cream, so one scoop of ice cream is one of these spoons full of ice cream. If you have not got a scoop, your local ice cream man will use one when he puts ice cream in a cone etc. You can also buy a scoop spoon in various home ware shops.

a scoop is something you use to scoop something out. A scoop can have different sizes some are small some are big. If you want to know how much volume has, it is undefinable.
The word scoop is used in the phrase "a scoop of ice cream" because if you go back to your early lessons in grammar, ice cream is considered a mass noun. It can't be measured unless it takes the volume or amount of the container it is in. Thus a scoop of ice cream. It would sound sound weird if you would say ice creams, instead of scoops of ice cream.

Ice cream scoops (aka cookie scoops) come in a range of sizes from less than an ounce to over 4 ounces.
If you don't know how much your scoop holds, fill it with water and then pour into a glass measuring cup to measure the amount it holds.
