OK so Pie is out and candied is not an option, i need to do something new and different. What do you suggest?

If you are looking for something savory instead of sweet try this.

"A tasty, savory version of TWICE BAKED SWEET potatoes."
INGREDIENTS:
3 medium sweet potatoes
1 teaspoon olive oil
2 shallots, finely chopped
1/2 cup fat-free ricotta cheese
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground ginger
1 tablespoon brown sugar
1/4 cup grated Parmesan cheese
2 1/2 tablespoons chopped fresh sage
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Pierce potatoes with a fork and bake until
soft, about 1 hour. Remove from oven and cool until potatoes can be handled, about 20
minutes.
2. Reduce oven temperature to 350 degrees F (175 degrees C). Grease a large baking sheet.
3. Meanwhile, place olive oil in small skillet over medium heat. Add shallots and cook and stir until
softened and beginning to brown, about 10 minutes. Set aside.
4. Cut potatoes in half lengthwise and scoop out pulp, leaving a thin shell. Set shells aside. Place
pulp into a blender or food processor and blend until smooth. Add ricotta, salt, pepper, ginger,
and sugar to the blender; blend until smooth.
5. Return potato mixture to a bowl; stir in shallots, Parmesan cheese, and sage. Spoon mixture
back into potato skins. Place potatoes on prepared baking sheet.
6. Bake until heated through, about 30 minutes.

try sweet potato soup, a South East Asian dessert which can be served chilled or warm. Its light and would be nice as an afternoon pick me up or after heavy meals.

All you need is sweet potatoes (the purple or orange type is fine), sugar and water. Clean, peel and cut the sweet potatoes into bite size chunks. Boil it in a pot of water till soft and if you like an Asian zing, add some ginger (the 'older', the better for its spiciness), red dates, white fungus or even some barley. Add sugar to taste and serve warm or chilled.

If you can find pandan leaves (clean it, tie in a bundle and pound before boiling with the water) it would add a nice fragrance to your dessert. Have fun!

SOUP
1 tablespoon oil (I used sunflower oil)
1/2-3/4 cup chopped onions (1-2 onions)
1 garlic clove, chopped
1 tablespoon curry paste (levelled tbsp, preferably Madras, Korma or another Indian or Caribbean curry paste you like)
1 tablespoon grated fresh ginger (levelled tbsp)
4 cups peeled and cubed sweet potatoes (not yams)
1 red bell pepper, deseeded and chopped
3 1/2 cups chicken stock or vegetable stock
2 tablespoons rum (optional but recommended, I use white rum)
salt
recommended topping
4-6 tablespoons sour cream (any fat content)
sweet paprika

SOUP:.
In a soup pot, heat oil over medium-low heat. Add curry paste and onions and cook for 4 minutes, stirring occasionally. Reduce heat if necessary. Add garlic clove and ginger and cook for another 1-2 minutes.
Add sweet potatoes and pepper. Mix. Add stock. Cook for 15 minutes or until vegetables are very soft.
Puree the ingredients in batches in a blender or puree the whole amount directly in the pot with a hand blender (if pot is high enough).
Check if you like the consistency of the soup. Add more stock or water if desired and adjust the seasonings (check if salt is needed). You can add more curry paste if desired, but most pastes need to be cooked first before adding to a dish. Add rum if using.
Serve:.
Serve in individual bowls and top each with a tablespoon of sour cream and a sprinkle of sweet paprika.

1.Sweet potato soup! Heat a knob of butter and fry some chopped onions and garlic and chopped sweet potato. (you can omit the onion and garlic if you don't like them) let the butter coat the sweet potato. Then boil till tender. Put everything in a blender, you may need to add a little water. Put the creamy mixture back into the pan add stock to a creamy consistency. Finish off with cream, salt and pepper.

2.Put chunks of sweet potato in your curry next time.

This is one of the lots of Indonesian foods.
It is easy. Mix an egg, preferably a duck egg, but a chicken one is OK too. Then egg coconut milk into it. Add the mashed 3/4boiled sweet potatoes. Add sugar as you like. Then mix well, and steam until cooked.

Now you have your dessert awaiting for you!

Sweet Potato Bars

Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1-1/2 teaspoons finely shredded orange peel
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
4 eggs
1-3/4 cups mashed, cooked sweet potato
1-2/3 cups granulated sugar
1 cup cooking oil
1/2 cup chopped pecans
1/2 cup raisins
2 3-ounce packages cream cheese, softened
1/2 cup butter or margarine, softened
2 teaspoon vanilla
4 cups sifted powdered sugar

Directions:
1. Stir together flour, baking powder, cinnamon, orange peel, baking soda, nutmeg, and salt in a medium bowl; set aside. Beat together eggs, sweet potato, granulated sugar, and oil in a large mixing bowl. Add flour mixture; beat until well combined. Stir in pecans and raisins.
2. Spread batter in an ungreased 15x10x1-inch baking pan. Bake in a 350 degree F oven for 25 to 30 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack. For the Cream Cheese Frosting, beat together cream cheese, butter, and vanilla until fluffy. Gradually add powdered sugar, beating until smooth. Frost bars with Cream Cheese Frosting. Cut into squares. Store in refrigerator.

Slice very thin and cook on frying pan or bbq with extra virgin olive oil, turn often till crispy brown. Use red sweet potato [kumara]. Take or leave a little salt

Or you can steamed the sweet potato, mashed it, mixed with some glutinous rice flour and sugar, fried it. It's a kind of malaysian dessert.Omit the sesame seeds if you don't like it.

sweet potato casserole...sweeten sweet potatoes in a dish with a pecan crumble topping and baked in the oven...so simple but so good

I like to just make them like a regular baked potato too and top them with cinnamon butter.
