BASIC COOKING RULES: Use 100% peanut oil. When frying a deep fried turkey, you cook it 3 1/2 minutes per pound at 350°F. For a crispier skin, add an extra five minutes to your frying time. So for a 20lb turkey it would be 70 minutes.
It doesn't need a rub and make sure it is well dried before you put it in the peanut oil make the turkey taste fantastic and if you want while it is resting give a peppering of poulttry seasoning and salt.
For easy clean up and fire safety put a layer of clay kitty litter around the base of the pan to absorb the oil spray and drips, also have a large pan and a low table to transfer the turkey to when it is done. NEver leave the turkey unattended and keep all pets and children inside and far away from the fryer. Good Luck!

Last year, and the year before - I deep fried a 21 pound bird in a Bayou Classic Stainless 32 qt fryer. It did take a bit of measuring the oil out to perfection, however. This particular model from Bayou does NOT recommend deep frying a turkey this size.
That being said - I've been deep-frying birds for many years and I took a chance. But I paid close attention to the following.
1: The bird actually fit in the fryer pot with water (fully sealed package around the bird) in order to measure the correct amount of oil that would be used. And yes, it was a tight fit! LOL
2: The bird was dry and just above room temp, give or take a few degrees.
3: The displacement of liquid (water when testing and, Oil when cooking) ensured that this WOULD WORK. AND IT DID! For two years running!
4: Lid fit (with liquid and bird when testing) and temp was set to 380 (with the oil) afterwards.
5: SLOWLY dunk bird into oil until fully submerged and cover. NO SPLATTER or overspill at all!!! The bottom bone of the legs did stick out just a tad and it was OK.
6: Turkey cooked, unchecked, (meaning the lid was NOT lifted once) for 1 hour and 3 minutes to the SECOND.
7: I removed it and let it set for 20 minutes. It was ABSOLUTELY PERFECT! Juicy, tender, not undercooked or overcooked and it was THEE best turkey I've ever had. BAR NONE!
8 Repeated last year and it was EVERY bit as tasty and tender as the previous year. Excluding this year as I just went to a friends house and had THEIR version of an overcooked, deep-fried bird! UGH! I should have stayed home and done my own! LOL

3 minutes per lb. is how long it will take to fry it. Make sure you measure for oil placement with water first! Then add oil. Bring up to 350 degrees and fry away! Leave it in an extra 5 minutes and you will be good to go! Good luck and happy eating!

I recently watched a show, that told you different ways of cooking a turkey on the foodnetwork my fave channel, anyways and it said about 1 hour or so but im not sure ok, so check the show was called secret life of.... and it was a thanksgiving episode, just check if it comes on tonight, and if it does you will know, but i heard fried ones are really good. Just keep checking probably about every hour or so

Make sure you use peanut oil - any other kind will make the turkey very greasy.

The best answer to your question is to not fry a 20 lb. turkey. The best size to fry is 12 to 16 lbs. at 3 minutes per pound at 350.
