Chocolat Pot de Crème
4 oz bittersweet chocolate
2 large egg yolks
2 Tbsp sugar
Pinch of salt
3 Tbsp half-and-half
1 cup heavy cream
1 tsp vanilla extract
1 tsp strong coffee or espresso
1 tsp confectioners' sugar
1 oz bittersweet chocolate; use a vegetable peeler to make shavings
1. Finely chop the chocolate and transfer to a mixing bowl.
2. Whisk the yolks, sugar, salt, half-and-half, and 1/2 cup heavy cream in a medium saucepan. Cook the mixture over medium-low heat, stirring constantly and scraping the sides and bottom of the pan with a wooden spoon until thick and smooth, about 6 to 8 minutes. Properly cooked custard will cling to the back of the spoon.
3. Pour the custard over the chocolate and let stand 3 to 4 minutes, or until the chocolate is melted. Whisk the mixture until smooth, and then add the vanilla extract and coffee or espresso. Divide between two ramekins. Cool to room temperature, cover with plastic wrap, and refrigerate for at least 3 hours.
4. Using a mixer or a metal bowl and a whisk, whip the remaining cream and confectioners' sugar until it's thick and soft peaks form, about 1 to 2 minutes. Garnish each pot de crème with whipped cream, and sprinkle chocolate shavings on top.

We make these in our neighborhood all the time and they are the biggest ht. Last time we were together we ended up having to make 4 batches.
1 lb bacon, any kind (maple-flavored works well.)
1 package cocktail smoked sausage links
1 lb light brown sugar (you can use more if you like)
1 box of round toothpicks
Preheat oven to 350 degrees.
Spray 9x13 inch cake pan with non stick spray.
(not neccessary but will definately help with clean up) Open package of bacon and cut entire slab into thirds.
Wrap a third of a slice of bacon around each cocktail weenie and secure with toothpicks.
Place each bacon wrapped weenie in cake pan, making sure to crowd them together.
(You'll want to leave an empty space in one corner of pan for ease of basting.) Liberally cover weenies with brown sugar, leaving only the toothpicks exposed.
Place weenies in hot oven.
Every now and then baste weenies with sugar/bacon grease mixture and break up any lumps of sugar.
Continue until sugar is completely melted and bacon is thoroughly cooked. Cook about 30-40 minutes.
Servings depend on the crowd you are feeding.
My crew will argue that 15-20 weenies qualify as a serving!
Once cooked you can keep them warm in the crock pot

one of my favorite appetizers to make is a spinich dip bowl. you get a pumpernickle loaf from the supermarket and carve out the top making a bowl shape. fill it with homemade or bought spinich dip. cut up the top portion into cubes to dip.
another is mexican layer dip. as you can see, i like dip haha. you take a pan, layer refried beans, salsa, cream cheese, chedder cheese. put it in the oven and bake for 20 minutes at 400 degrees. you can then top with sour cream, chives and chopped tomoato. use chips to dip.
another great dip recipe is similar only using hummus, olives, tomato, feta and cucumber. no baking involved. just layer it up and serve with pita.
for dessert how about brownie cookies. its so simple. take a brownie boxed mix. follow the instructions except for one thing, use 1/4 of the water called for. take the mixture and drop onto cookie sheets. im not sure what the exact time needed in the oven, so just watch it. while still hot, sprinkle with granulated sugar.
enjoy!

Filled endive lettuce leaves are so very pretty and elegant. Remove as many leaves from endive lettuce heads as you can (the inner leaves just don't separate well). They look like mint green and white boats. Lay them out in an attractive design on a pretty platter, then fill them with shrimp salad, carrot salad, or any other cold filling. Guests can easily pick them up with their fingers and enjoy.
Here's another one: Remove the stem ends from red radishes, making a flat surface so the radish can stand up. Hollow out the inside of the radish with a strawberry huller. Fill the cavity with a mixture of cream cheese, garlic and chopped fresh herbs.
Hope that gets your imagination going.
