Cream of celery, cream of chicken are both fine, but I would use the cream of celery, personally.

I too am allergic to mushrooms, I always use cream of chicken soup. I would suggest also adding about 6 oz of velveeta cheese, melt it with the soup and mix well, then pour over your green beans. It is Awesome and I've been getting good reviews for over 6 years.

Cream of celery would work fine but try carmaling some onions, just cook slowly till they turn light brown and cook on low so they don't burn in some butter and oil and/or roast some garlic till it's soft. It should give the casserole some nice fuller flavor no one will notice there aren't mushrooms.

I would use the cream of chicken if I were you. It gives the recipe a little bit saltier taste but not overwhelming. Whenever I am cooking something for people who dont like mushroom I always substitute cream of chicken for cream of mushroom. I hope this helps. Good Luck and God Bless! Have a great Thanksgiving!

Depends upon your taste. Just don't forget to add a bit of soy sauce, some fresh-ground pepper, and LOTS of french-fried onions (my favorite part).
I like to use cream of chicken sometimes, but, I've used cream of celery when I knew there would be vegetarians at the dinner--GB casserole is a good veggie dish that way.

If you want to keep it totally vegetarian or totally a vegetable dish, then go with the cream of celery. If not, the cream of chicken will make it an excellent light chicken and vegetable dish. Think about whom you are serving - is it only yourself? Or is there someone else? You need to cater a little to their needs as well - or just be selfish if its yourself.
Personally I like the cream of chicken soup with it - but thats because I like poultry.

My best friend is allergic to mushrooms, so I use cream of chicken soup in place of the cream of mushroom soup in the casserole.

Try cream of celery. The main thing that really makes green bean casserole good is the french fried onions so I don't think it would matter what kind of soup you use as long as it's creamy.

I believe that cream of chicken would be best as two vegetables together (i.e. celery soup & green beans) would not have the richness that mushroom soup would have. I think mushrooms have a very 'meaty taste' so in this case chicken soup (strained to remove the chicken if you like) would be the best.

Cream of chicken, cream of broccoli, or cream of celery. I personally substituted Cream of Mushroom (because I hate mushrooms) for Cream of Chicken and it turned out delicious!
