All you can do is take them to court.
You provided a service - they didn't pay.
If it's a smaller amount, you can take them to small claims court. The check is your proof on non payment.

If the check is stopped, then it's no good, like it was never written.

You will have to treat this like any other unpaid bill and go to small claims court or sell it to a collection agency. Keep the check.\; It's proof that they agreed that they owed you the money at one point.

The only way I know how at this point is to file a judgment against the person. Our you might start by filing a police report for theft with your local police department.It will depend on the reasons and amount. Good Luck
