This is true I believe. My husband notice this with tomato based foods a lot. I think the spices the tomato base absorbs into the food during the 24 hours. Chili is better the second day. I make goulash that tastes better the next day. Now I'm getting hungry ...again. ;)
Thanksgiving dinner to me is even better the next day, for the same reason with the flavor absorbing more into foods.

My brother reckons take away pizza tastes better the morning after, especially if you leave it in the box on the floor, lol! I think most foods taste better fresh tho, I can't think of one thats better on the 2nd day, except maybe a slightly unripe banana.

Curries, casseroles and stews are best eaten the day after the initial cooking,
Cold pizza the morning after the night before is the law! One of the best hangover cures along with a full english brekkie

I was walking to the North pole last year when Me and my Partner ran out of Food and we'd already eaten the Dogs........ So we drew straws on who would eat who.
I cheated and he lost.
He took it all in good spirit though..........just before I cut off his legs and ate them.
They tasted much better on the second day though.
Oh how I laughed when I discovered the 5 Pot-Noddles in my back Pack.
I didnt realise we were only half a mile from the nearest Burger King too.

From my own perspective, no food is better the second day. It is always good to eat food when it is fresh and contains nutrients. When you leave food till the second day,the nutritive value declines.Especially vegetables, they should be eaten when fresh. Except curbs which you cant finish, then u freeze it and the next day you warm before eating.

Really any Italian food; pizza, spaghetti and meatballs, lasagna. Turkey is always better the next day, as is stuffing. Chili is always good the next day if you make it from fresh. My favorite is a homemade cheeseball, always the best the next day!
