can a speed camera catch you, if you are speeding head on to the camera on the opposite side of the road, with no road markings on my side of the road?

A speed camera will catch you no matter what you do, it was proven so on Mythbusters, using a series of different techniques. None of them were able to beat the camera.

It is my understanding that the only way to beat the camera is if something larger is blocking you when you go past. An 18 wheeler, RV, something bigger than your vehicle. This came from a police officer.

Yes, it takes the picture from behind you when you pass the camera.
