There are lots of good sushi places all over Oahu. Kozo's & Genki are both good & have multiple locations. But if you are looking for a real experience, there is a new place at Ala Moana Center called Tsukiji's Fish Market. It is a buffet that features sushi, sashimi, & lots of other local favorites, leaning heavily on Japanese food, but with many other choices. It is not cheap - about $18, if I recall correctly. But it is very good.

Genki Sushi at Ala Moana Shopping Center also on Kapahulu Ave.. Kapahulu Ave starts at Kuhio Beach by the zoo in Waikiki & has many restaurants, Chinese, Japanese, Hawaiian, etc. (most of the restaurants are up the street about 1/2 mile & reasonably priced).
Good quality sushi like Kobe Japanese Steak House isn't "cheap". Real, quality sushi costs easily $70-$80 per person but it is worth it! Just like anything else there are different "grades" of sushi.

Try genki sushi or even the Pearl City Sushi Bar located in pearl city Zippy's.

A good take-out is Kozo Sushi--very fresh! they are all over in Honolulu.

genki and kozo are good places to go.. but i personally like kuru kuru sushi. it's right across from pearlridge shopping center and i find it a bit cheaper and just as good as genki or kozo.
